One Bowl Fudgy Brownies

Are you a fudgy or cake-y brownie person?  I'm in the fudgy camp, without a doubt.  If I wanted a cake-y brownie, wouldn't I just eat cake?  I'm pretty sure I'm in the majority on this issue.

 I didn't have a fudgy vegan brownie recipe in my back log (how?!), so I set out to make one.  I wanted to make sure to develop this as a one bowl recipe (because who doesn't love fewer dishes) and to only use really common pantry items.  I can't tell you how many times I've wanted to make brownies but haven't had unsweetened baking chocolate on hand.  And I bake often.  So lets just go ahead and eliminate that as an ingredient option and make everyones life easier.

This recipe comes together in one bowl really quickly and is sure to be a crowd pleaser-- whether on its own or adorned with your favorite non-dairy ice cream.

One Bowl Fudgy Brownies

Yield: 16

1 Stick (8 Tbsp) Earth Balance Buttery Spread, Melted

1 Cup Cocoa Powder

1 1/2 Cup Sugar

1/3 C Apple Sauce

2Tbsp Ground Flax Seed

1/4 Cup Water

2tsp Vanilla

1 1/2 Cups Flour

1 tsp Baking Powder

1/4 tsp Salt

1/2 Cup Chocolate Chips

Method

Preheat oven to 350*.  Spray a 9x9 ( an 8x8 will work just fine as well) baking pan with non stick spray.

In a small bowl, combine ground flax and water and set aside to thicken to create your "flax egg".

In a large bowl, combine melted Earth Balance with the cocoa powder using a whisk.  Next add, sugar, whisking to combine.  Add in apple sauce, the flax egg and vanilla, whisking throughly to combine.  On top of the wet ingredients, add your flour, baking powder and salt.  Using a rubber spatula, stir until everything is homogenous.  Finally add the chocolate chips into the batter and stir to evenly distribute.

Scrape your batter into your prepared pan, pressing it evenly into the corners.  Bake at 350 for 30-35 minutes, turning half way through.  A toothpick or a spall paring knife inserted into the center of the brownies will come out with a few moist crumbs attached.  Let cool completely, slice into 16 squares, and serve.
