Peanut Butter Chia Granola

How do we get suckered in to buying granola at the grocery store? Its so simple and inexpensive to make at home and its completely customizable to our personal tastes and preferences.  Personally I'm a pretty plain granola gal.  If I'm feeling adventurous, I'll throw some coconut flakes, cacao nibs or chopped peanuts in the mix, but I'm not really into dried fruit, so that would be a rare for me.  Today I'm sharing my most basic granola recipe that you can customize however you'd like.

This base recipe is the perfect amount of sweetness for me, but if you taste it at the end and want it to be sweeter, add some chopped dried figs, dates, or raisins for an extra hit of sweetness.  If you don't like peanut butter, use almond butter or sunflower seed butter-- I told you.  Its completely customizable.

Its the perfect topping for an oat bowl, smoothies, fruit, or just by the handful.  Start with recipe and play around with it to make it your own, because the combinations are endless.  And never waste your money granola from the grocery store again.

Peanut Butter Chia Granola

Yield: 1 Quart

2 Cups Old-Fashioned Rolled Oats*

1 Cup Crisp Rice Cereal 

1/4 Cup Agave Nectar

1/4 C Natural Creamy Peanut Butter**

Pinch of Salt

1 Tbsp Chia Seeds

Optional: 1 Cup chopped dried fruit, cacao nibs, or chocolate chips

Method

Preheat oven to 300* F.

In a large bowl, combine the peanut butter, agave nectar, pinch of salt and chia seeds.  Stir to Combine.  Into that same bowl, add the oats and crisp rice cereal.  Gently stir with a spatula until everything is evenly coated.  Pour your granola mixture onto a parchment lined baking sheet and spread out evenly.  Bake for 25-35 minutes, stirring every 15 minutes or so until the granola is evenly browned.  Let cool completely, add your dried fruit or chocolate chips if you're using them, and store in an air tight container.

*Dont use quick or instant oats.

**Be sure to use natural peanut butter- the kind that you have to stir. I used salted.  If you're using unsalted you may want to add a pinch more salt.
