Overnight oats are my favorite weekday breakfast. I love that I can prep a bunch of jars, store them in my cupboard and add liquid the night before work. Then, when I wake up way too early in the morning, breakfast is ready with absolutely no effort. These Peanut Butter Cookie Dough Overnight Oats are no exception.

There are hundreds of variations of overnight oats out there. I generally keep mine simple with oats, flax or chia seeds, some sort of plant milk and lots of fresh or frozen fruit.. But sometimes, I'm feeling a little more decadent and I will make these Peanut Butter Cookie Dough Overnight Oats.

These overnight oats are so good and taste decadent, but in reality they are filled with nourishing ingredients. Which is my ideal breakfast situation. I'm a very active person between my job, and my active lifestyle outside of work, so I need a breakfast that is hearty and will fuel my lifestyle.

These Peanut Butter Cookie Dough Overnight Oats are filled with complex carbs from the oatmeal to power my activity. They are filled with healthy fat from the flax and peanut butter to keep me full. And they are filled with protein from the oats, peanut butter and soy milk to keep me satiated. So as you can see, this is pretty much the ideal breakfast, masquerading as an indulgent breakfast.
Substitutions
There are a few things you can substitute here, and a few things I don't recommend substituting. Feel free to substitute quick oats (but not instant) for rolled oats. And substitute any nut or seed butter for the peanut butter. If you don't have medjool dates, you can substitute 2 deglet noor dates as they are smaller. Or if you don't have dates all together substitute a tablespoon of maple syrup for the date. And as always, feel free to substitute any plant milk that you prefer or have on hand!

As I mentioned above, don't substitute instant oats for rolled oats. The texture is too fine. Also don't substitute or leave out the ground flax. It is crucial for the thick cookie dough like consistency of the finished oats.

Overnight oats are foolproof, delicious and filling. And when your breakfast tastes like Peanut Butter Cookie Dough, you will be happy to hop out of bed as soon as your alarm goes off.
Peanut Butter Cookie Dough Overnight Oats
Ingredients
- ⅔ Cup Rolled Oats
- 1 Tbsp Ground Flax
- Pinch Salt
- 1 tablespoon Peanut Butter
- 1 Medium Medjool Date, Finely Chopped*
- ¼ teaspoon Vanilla Extract
- ¾ Cup Unsweetened Plant Milk I used Soymilk
- 1 tablespoon Cacao Nibs Or Mini Chocolate Chips!
Instructions
- Combine all ingredients into a jar with a tight filling lid.
- Stir until everything is well combined. Secure the lid and place into the refrigerato for 2 hours at the least, but ideally over night.
- Eat in the morning!
