Ingredients

  • 1 tablespoon Dairy-Free Butter, melted
  • 2 tablespoon Light Brown Sugar, tightly packed
  • 1 tablespoon Non-Dairy Milk
  • ½ teaspoon Vanilla Extract
  • 5 teaspoon Natural Cocoa Powder see note
  • ¼ Cup All-Purpose Flour
  • teaspoon Baking Soda
  • Pinch Kosher Salt
  • 2 tablespoon Chocolate Chips plus more for topping

Instructions

  • Preheat oven to 350* F and line a sheet tray with parchment.
  • In a small bowl using a spoon, stir melted butter and brown sugar together.
    1 tablespoon Dairy-Free Butter, melted, 2 tablespoon Light Brown Sugar, tightly packed
  • Add non-dairy milk and vanilla and stir to combine, then add cocoa powder and stir until completely combined.
    1 tablespoon Non-Dairy Milk, ½ teaspoon Vanilla Extract, 5 teaspoon Natural Cocoa Powder
  • Add flour, baking soda and salt. Stir until just combined. Then, add chocolate chips and stir to distribute.
    ¼ Cup All-Purpose Flour, ⅛ teaspoon Baking Soda, Pinch Kosher Salt, 2 tablespoon Chocolate Chips
  • Split the dough into 2 mounds of dough and place them onto a parchment-lined baking sheet. Top with additional chocolate chips.
  • Bake in a 350* oven for 8-10 minutes or until the edges are just set. Allow to tool on the baking sheet for 5 minutes, then enjoy!

Notes

Natural cocoa powder just means it is not Dutch processed. I like Ghirardelli, but Hershey’s cocoa powder will also work!
It can be hard to tell when these cookies are done because they are a deep brown color. You are looking for the edges to just feel set. They shouldn’t take more than 10 minutes. Then allow them to sit on the baking sheet for 5 minutes to continue cooking out of the oven.
