Vegan Pear Crumble (Gluten-Free)

Ingredients

For the Pear Filling

  • 1 Medium Ripe Pear I recommend Bartlett or Bosc
  • 1 ½ tsp Maple Syrup
  • 1 teaspoon Lemon Juice
  • 1 teaspoon Cornstarch
  • ¼ teaspoon Cinnamon

For the Oat Topping

  • Cup Gluten-Free Rolled Oats
  • 1 tablespoon Nut Butter see note
  • 1 ½ teaspoon Maple Syrup
  • ¼ teaspoon Cinnamon

Instructions

  • Preheat oven to 350* F
  • Peel, core and dice the pear into ½ inch cubes. Place into a small bowl.
    1 Medium Ripe Pear
  • To the pears, add maple syrup, lemon juice, cornstarch and cinnamon. Stir together gently with a spoon until combined.
    1 ½ teaspoon Maple Syrup, 1 teaspoon Lemon Juice, 1 teaspoon Cornstarch, ¼ teaspoon Cinnamon
  • Transfer pear mixture into an 8 oz ramekin or similar sized oven safe vessel.
  • In a small bowl, make the oat topping by combining oats, nut butter, maple syrup and cinnamon. Stir with a spoon until the mixture is well combined.
    ⅓ Cup Gluten-Free Rolled Oats, 1 tablespoon Nut Butter, 1 ½ teaspoon Maple Syrup, ¼ teaspoon Cinnamon
  • Add the oat mixture on top of the pear mixture. Its okay if the oat-topping domes over the top. Gently press the oat mixture with the palm of your hand so it sticks together atop the pears.
  • Place ramekin on a baking sheet and bake in a 350* F oven for 30 minutes. The top should be golden brown and the pears should be bubbling.
  • Serve warm.

Notes

Use whatever nut butter you have on hand: peanut butter, cashew butter, almond butter or tahini.
To store: allow the crumble to cool, then cover and place in the refrigerator for up to 3 days.
