Lightly toast your slices of bread to dry them out a bit.
While the bread is toasting, coconut milk, garbanzo flour, vanilla, cinnamon and salt in a shallow bowl. Whisk the mixture until smooth.
Place a non-stick skillet over medium-low heat. Wait for the skillet to heat up for about a minute. Either coat the bottom with pan spray or a bit of non dairy butter.
Working one at a time, dunk as many slices of bread as you can good on your pan. Be sure to dunk the slices front and back.
Place on the pan and let cook for about 3 minutes, or until brown. Then flip and cook about 3 more minutes, or until the second side is brown.
Serve with non dairy butter, berry compote or maple syrup or however you prefer your french toast!
