Peanut Butter Cookie Dough Overnight Oats

  • Cup Rolled Oats
  • 1 Tbsp Ground Flax
  • Pinch Salt
  • 1 tablespoon Peanut Butter
  • 1 Medium Medjool Date, Finely Chopped*
  • ¼ teaspoon Vanilla Extract
  • ¾ Cup Unsweetened Plant Milk I used Soymilk
  • 1 tablespoon Cacao Nibs Or Mini Chocolate Chips!


  • Combine all ingredients into a jar with a tight filling lid.
  • Stir until everything is well combined. Secure the lid and place into the refrigerato for 2 hours at the least, but ideally over night.
  • Eat in the morning!


*You can sub 1 tablespoon of Maple Syrup if you don't have dates!
