Black Bean Burritos with Buffalo Cauliflower Rice

These Black Bean Burritos with Buffalo Cauliflower Rice are a fun and delicious twist on a simple recipe! These burritos are a super easy weeknight meal and only require 30 minutes to make.

Ingredients

For the Black Beans

  • 1 15 oz Can of Black Beans, partially drained See Note!
  • ¼ teaspoon Garlic Powder
  • ¼ teaspoon Onion Powder

For the Buffalo Cauliflower Rice

  • 2 tablespoon Olive Oil
  • 6 Cups Cauliflower Rice See note
  • Cup Franks Red Hot Buffalo Wing Sauce
  • Pinch of Salt

To Assemble The Burritos

  • 3-4 10" Flour Tortillas
  • ¾ Cup Guacamole
  • Any additional toppings you'd like such as: cilantro, tomato or pico de gallo

Instructions

Simmer the Black Beans

  • Add the black beans, garlic powder and onion powder into a small saucepan. Simmer on low for about 10 minutes, or until most of the liquid has evaporated. Then cover and remove from heat.

Make the Buffalo Cauliflower Rice

  • Place a large skillet over medium heat.
  • Add olive oil and cauliflower rice to the pan and season with a pinch of salt. Cook, stirring occasionally for 10 minutes or until the cauliflower is cooked and a little browned in some places.
    2 tablespoon Olive Oil, 6 Cups Cauliflower Rice, Pinch of Salt
  • Add the buffalo sauce and stir. Cook for 1-2 minutes longer or until the liquid from the wing sauce has evaporated leaving you with fluffy cauliflower rice.
    ⅓ Cup Franks Red Hot Buffalo Wing Sauce

Build your Burritos

  • Warm tortillas in the microwave or in the oven.
    3-4 10" Flour Tortillas
  • Fill your burritos with cauliflower rice, then black beans, a scoop of guacamole. Add any additional topping you desire like cilantro or diced tomato.
    ¾ Cup Guacamole, Any additional toppings you'd like such as: cilantro, tomato or pico de gallo
  • Roll up and enjoy.

Notes

Do not drain and rinse the black beans. You need a little bit of liquid to simmer the beans in. I like the pop the top off and hold it over the can and turn the can upside down to drain some of the liquid, then pour the beans into the saucepan.
If you are making your own cauliflower rice, 1 medium head of cauliflower will make about 6 cups of cauliflower rice.
