Chocolate Covered Dates with Peanut Butter

These Chocolate Covered Dates are stuffed with peanut butter and taste like a snickers bar! They only require 6 ingredients and are the perfect, easy little treat.

Ingredients

  • 8 Medium Medjool Dates See Note
  • ¼ Cup Peanut Butter See Note
  • 3 tablespoon Roasted Peanuts
  • 1 Cup Chocolate Chips
  • 2 teaspoon Coconut Oil
  • Flakey Sea Salt

Instructions

  • Use a paring knife to cut the dates lengthwise down to the pit. Gently open the dates and remove the pits.
    8 Medium Medjool Dates
  • Use a butter knife to spread the inside of each date with about 1 ½ teaspoons of peanut butter. Then, sprinkle peanuts on top of the peanut butter and gently close the dates back up as much as you can. Place them onto a parchment lined plate and place them in the freezer for 1 hour or until the are frozen.
    ¼ Cup Peanut Butter, 3 tablespoon Roasted Peanuts
  • Once the dates are frozen, combine the chocolate chips and coconut oil in a small bowl. Microwave in 15 second increments, stirring between, until the chocolate is melted.
    1 Cup Chocolate Chips, 2 teaspoon Coconut Oil
  • Remove the dates from the freezer. Then, working one at a time, place a date cut side down into the chocolate and use a fork to turn the date over to coat the bottom, then place it back onto the parchment lined plate. Sprinkle with flakey sea salt before the chocolate fully sets.

  • Serve!

Notes

Medjool dates are the most widely available type of date and they're also my favorite. I highly recommend them for this recipe. But if you can only find Deglet Noor dates, they will work, too.
Use any nut butter for this recipe! It would be great with almond, cashew or even sunflower seed butter.
To store: Place the dates in an airtight container and store in the refrigerator for up to 2 weeks.
