Butter Bean Hummus

- 15 oz Can of Butter Beans, drained and rinsed
- ¼ Cup Fresh Lemon Juice
- ¼ Cup Tahini
- 2 tablespoon Extra Virgin Olive Oil
- 1 Medium Clove of Garlic
- ¼-1/2 teaspoon Kosher Salt Less if using table salt!
- Toppings like additional olive oil, toasted pine nuts, sumac or za'atar
Into the bowl of a food processor, add the butter beans lemon juice, tahini and olive oil. Then, use a microplane to grate the garlic into the bowl.
15 oz Can of Butter Beans, drained and rinsed, ¼ Cup Fresh Lemon Juice, ¼ Cup Tahini, 2 tablespoon Extra Virgin Olive Oil, 1 Medium Clove of Garlic
Process on high until creamy. Then, scrape the bowl down with a rubber spatula and add ¼ teaspoon of kosher salt. Then, process on high to mix it in. Now taste the hummus and add additional salt if needed.
¼-1/2 teaspoon Kosher Salt
Scoop the butter bean hummus onto a plate or a bowl and top with any desired toppings. Serve!

I have added a range of salt to this recipe, because everyone has different preferences. So, start with ¼ teaspoon and taste the hummus before adding more!
Be sure to grate the garlic with a microplane, or press it through a garlic press before adding it into the food processor.
