Place rolled oats into the bowl of a food processor. Process the oats until they have the texture of a coarse meal.
1 ⅔ Cups Rolled Oats
Add peanut butter, applesauce, agave, vanilla extract and salt into the food processor. Pulse until a dough forms.
½ Cup Peanut Butter, ⅓ Cup Applesauce, 3 tablespoon Agave, ½ teaspoon Vanilla Extract, Pinch Salt
Add chocolate and pulse a few times to distribute.
¼ Cup Mini Chocolate Chips
Scoop the mixture onto a parchment-lined plate using a 1 ½ tablespoon cookie scoop. You should get 15-17 portions.
Roll each portion of dough between the palms of your hands to make balls. Store in the refrigerator for up to 2 weeks.
If you don't like peanut butter, use any nut butter you like. Cashew or almond butter would be breat.
Do not use regular-sized chocolate chips for this recipe! They will be too big.
