- 2 Cups Finely Chopped Pineapple See note
- ¼ Large Red Onion, finely chopped
- 1 Medium Jalapeño, seeded and minced See note
- ⅓ Cup Cilantro, lightly packed, chopped
- 2 tablespoon Fresh Lime Juice
- ¼ teaspoon Kosher Salt
Into a large bowl, combine finely chopped pineapple, red onion, jalapeño and cilantro.

Add lime juice and salt to the bowl and stir the Pineapple Pico de Gallo together with a large spoon.
2 tablespoon Fresh Lime Juice, ¼ teaspoon Kosher Salt
Serve immediately or store in an airtight container in the refrigerator for up to 4 days.
2 Cups of pineapple is about ½ of a fresh pineapple. Chop it into about ½" cubes or slightly smaller.
If you don't like spice, use ½ of a jalapeño. If you love spice, you can use a spicier pepper like a habanero!
The most important part of this recipe is the chopping! Try to chop every thing in small, evenly sized pieces. This will ensure that you get a little bit of each ingredient in every bite.
