Roasted Cabbage Steaks

Ingredients

  • 1 Medium Head of Green Cabbage
  • 3 tablespoon Extra Virgin Olive Oil
  • 1 teaspoon Za'atar see note
  • ½ teaspoon Garlic Powder
  • ½ teaspoon Onion Powder
  • Kosher Salt and Black Pepper
  • ¼ Medium Lemon

Instructions

  • Preheat oven to 425*F.
  • Wash the cabbage and pat dry. Then, remove any outer wilted or tough leaves. Use a chef's knife to cut the cabbage in half directly through the stem. Then, cut each half in half to create 4 cabbage steaks that are about 1.25 inches thick. Set aside.
    1 Medium Head of Green Cabbage
  • In a small bowl, combine olive oil, za'atar, garlic powder and onion powder. Stir to combine.
    3 tablespoon Extra Virgin Olive Oil, 1 teaspoon Za'atar, ½ teaspoon Garlic Powder, ½ teaspoon Onion Powder
  • Place the cabbage steaks on an unlined baking sheet. Be careful with the end pieces! Use a pastry brush to brush both sides of each steak with the olive oil mixture, then season both sides with salt and pepper.
    Kosher Salt and Black Pepper
  • Be sure the end pieces of the cabbage are cut side up. Then, place in a 425*F oven for 35-40 minutes or until the cabbage is browned around the edges and soft in the middle.
  • Remove the cabbage from the oven and squeeze the lemon over the top before serrving. Enjoy!

Notes

Za'atar is a Middle Eastern spice blend made of thyme, sesame seeds and sumac. It is so delicious on these cabbage steaks!
Be careful when handling the end pieces of the cabbage. They do not have the stem in the middle to hold them together, so they will want to fall apart.
