Vegan Blondies

These Vegan Blondies are soft, chewy, and packed with chocolate chips. They are easy to make and only require 8 simple, dairy-free ingredients. They are like a super thick chocolate chip cookie!

  • 1 8-inch Square Baking Pan
  • Measuring Cups and Spoons

Ingredients

  • 10 tablespoon Non-Dairy Butter, room temperature
  • 1 Cup Dark Brown Sugar, tightly packed
  • Cup Non-Dairy Milk
  • 2 teaspoon Vanilla Extract
  • 2 Cups All-Purpose Flour
  • 1 ¾ teaspoon Baking Powder
  • ½ teaspoon Kosher Salt
  • 1 Cup Chocolate Chips Plus a few more for topping!

Instructions

  • Preheat oven to 350*F. Grease an 8-inch square baking pan and line it with parchment paper.
  • In the bowl of a stand mixer fitted with the paddle attachment, cream non-dairy butter and dark brown sugar until light and fluffy.
    10 tablespoon Non-Dairy Butter, room temperature, 1 Cup Dark Brown Sugar, tightly packed
  • Add non-dairy milk and vanilla and mix on low until well combined.
    ⅓ Cup Non-Dairy Milk, 2 teaspoon Vanilla Extract
  • Next, add flour, baking powder, and salt, and mix on low until just combined. Then, add chocolate chips and mix until distributed.
    2 Cups All-Purpose Flour, 1 ¾ teaspoon Baking Powder, ½ teaspoon Kosher Salt, 1 Cup Chocolate Chips
  • Scrape the blondie dough into a prepared 8-inch square baking pan and use an offset spatula to spread it out evenly. Top the dough with a few more chocolate chips and gently press them in.
  • Bake the blondies in a 350*F oven for 26-29 minutes or until the edges are golden brown.
  • Allow the blondies to cool, then slice them into squares and enjoy!

Notes

To get clean cuts when slicing these Vegan Blondies, clean the knife under hot water, then wipe it dry with a kitchen towel after each cut!
