Preheat oven to 350* F. Grease an 8" round cake pan with coconut oil or pan spray and insert a parchment circle into the bottom of the pan.
In a medium bowl, combine flour, baking powder, baking soda and salt. Whisk to combine and set aside.
1 ¾ Cups All-Purpose Flour, 1 ½ teaspoon Baking Powder, ¼ teaspoon Baking soda, ½ teaspoon Kosher Salt
In a large mixing bowl, combine sugar, non-dairy milk, olive oil, orange juice, orange zest and vanilla. Whisk to combine. Then, add the dry ingredients and whisk to form the batter.
¾ Cup Sugar, ⅔ Cup Non-Dairy Milk, ½ Cup Extra Virgin Olive Oil, ⅓ Cup Fresh Orange Juice, 2 teaspoon Orange Zest, 1 teaspoon Vanilla Extract
Pour the batter into the prepared 8" round cake pan. Spread the batter out evenly, then bake in a 350*F oven for 36-40 minutes, or until a toothpick inserted into the center of the cake comes out clean.
Allow the cake to cool completely, then flip it out onto a large plate or cake stand. Dust the cake with powdered sugar just before serving.
