Preheat oven to 350* Grease an 8"x8" square baking pan and line with parchment.
In a medium bowl, combine flour, baking powder, cinnamon and salt. Whisk and set aside.
1 ½ Cups All Purpose Flour, 2 teaspoon Baking Powder, 1 teaspoon Ground Cinnamon, ¼ teaspoon Kosher Salt
In a large bowl, combine sugar, applesauce, non-dairy milk and vanilla. Whisk, then add the melted vegan butter and whisk once more.
⅔ Cup Granulated Sugar, ½ Cup Unsweetened Applesauce, ¼ Cup Non-Dairy Milk, 1 teaspoon Vanilla Extract, 6 tablespoon Vegan Butter, melted and cooled
Add the dry ingredients to the wet ingredients and whisk just until the batter is formed. Then add the chopped apple and fold with a spatula to distribute.
½ Medium Apple, cut into ¼" pieces
Scrape the batter into a prepared 8"x8" baking pan and use the spatula to spread it evenly into the corners. Then, squeeze handfuls of the crumb topping in your hands to make it stick together and lightly break it up over the apple cake. This will help create big crumb chunks.
Bake in a 350* F oven for 40-43 minutes or until a toothpick inserted into the center of the crumb cake comes out clean.
Allow the crumb cake to cool in the pan for 20 minutes, then gently move it to a cutting board to continue cooling.
Dust with powdered sugar, if desired, slice and serve.
