This Vegan Apple Cinnamon Crumb Cake is easy to make, super moist thanks to applesauce and topped with tons of that coffee cake crumble topping we all love.
Crumb cake is one of my all time favorite brunch bakes. I do like muffins as well. especially when they have a streusel topping like these Peach Coffee Cake Muffins. But, back to this recipe.
The crumble topping is crisp and cinnamony and the cake is light and tender. The texture combination is incredible. And in my version, there is applesauce in the vegan cake to keep it moist. And, of course, a dose of cinnamon and plenty of fresh apple chunks to make it Fall themed. Its the perfect vegan coffee cake!

Ingredients
All-Purpose Flour: All-purpose flour is used in the crumble topping and in the crumb cake.
Applesauce: Be sure to use unsweetened applesauce in this cake. I like this one by Whole Foods 365, but any brand will work! The applesauce helps keep this vegan cake perfectly moist.
Vegan Butter: Vegan butter keeps everything super moist. I like Country Crock Plant Butter Sticks and Soy-Free Earth Balance Buttery Sticks.
Cinnamon: I added cinnamon to the crumb topping and vegan apple cake because the more cinnamon the better.
Sugar: You will need both light brown sugar and granulated sugar for this recipe.
Chopped Apple: My favorite apple to use in baking is Honeycrisp. But you can also use Granny Smith if you prefer.
Variations
Instead of cinnamon, use a pumpkin pie spice blend or a masala chai spice blend in both the crumble topping and the cake. If you don't have a masala chai spice blend, use the one in my Vegan Dirty Chai Cake!
How to Make Vegan Streusel
The first thing you will do for this Vegan Apple Cinnamon Crumb Cake recipe is make the coffee cake crumble topping. Heres how to do it.
In a medium bowl, combine brown sugar, cinnamon and flour. Mix with a spoon to evenly distribute everything.
Next, pour melted butter into the bowl and mix with a spoon until everything is moist.
The mixture should be shaggy but should stick together when squeezed in your hand.
And thats it! Now, set the crumble topping aside to mix the Apple Cinnamon Cake together.
Instructions
Once you've made the crumble topping, mix the vegan cinnamon applesauce cake. Here's how to do it:
First, add the flour, baking powder, cinnamon and salt in a medium bowl and whisk to combine.
Then, in a large bowl, add granulated sugar, applesauce, melted butter, non-dairy milk and vanilla and whisk to combine.
Next, add the dry ingredients to the wet ingredients and whisk to combine.
Now, add the chopped apple and use a spatula to fold them in.
Then, scrape the batter into a prepared 8x8 pan and spread out evenly.
Finally, top the vegan apple cake with the coffee cake crumb topping and bake!
Top Recipe Tip
For big chunks of crumb topping, squeeze handfuls of the crumble in your hand to make it stick together.
Then, lightly break it up over the top of the Vegan Apple Cinnamon Crumb Cake.
Storage
To store this Vegan Apple Cinnamon Crumb Cake, place it into an airtight container and keep at room temperature for up to 3 days.
Or freeze for up to a month, then reheat in an oven or toaster oven for best results.

For the Streusel
- 18 tablespoon All Purpose Flour see note
- ½ Cup Light Brown Sugar
- 1 teaspoon Ground Cinnamon
- 6 tablespoon Vegan Butter, melted and cooled
For the Apple Cake
- 1 ½ Cups All Purpose Flour
- 2 teaspoon Baking Powder
- 1 teaspoon Ground Cinnamon
- ¼ teaspoon Kosher Salt ⅛ teaspoon if using table salt
- ⅔ Cup Granulated Sugar
- ½ Cup Unsweetened Applesauce
- ¼ Cup Non-Dairy Milk
- 1 teaspoon Vanilla Extract
- 6 tablespoon Vegan Butter, melted and cooled
- ½ Medium Apple, cut into ¼" pieces this should be just a little more than ½ cup
- 1 tablespoon Powdered Sugar optional
Instructions
Make the Crumble Topping
- In a medium bowl, combine flour, brown sugar, and cinnamon, Stir to combine. Then, add melted butter and stir until everything is moist. The mixture should look crumbly, but stick together when squeezed. For the Cake
- Preheat oven to 350* Grease an 8"x8" square baking pan and line with parchment.
- In a medium bowl, combine flour, baking powder, cinnamon and salt. Whisk and set aside.1 ½ Cups All Purpose Flour, 2 teaspoon Baking Powder, 1 teaspoon Ground Cinnamon, ¼ teaspoon Kosher Salt
- In a large bowl, combine sugar, applesauce, non-dairy milk and vanilla. Whisk, then add the melted vegan butter and whisk once more.⅔ Cup Granulated Sugar, ½ Cup Unsweetened Applesauce, ¼ Cup Non-Dairy Milk, 1 teaspoon Vanilla Extract, 6 tablespoon Vegan Butter, melted and cooled
- Add the dry ingredients to the wet ingredients and whisk just until the batter is formed. Then add the chopped apple and fold with a spatula to distribute.½ Medium Apple, cut into ¼" pieces
- Scrape the batter into a prepared 8"x8" baking pan and use the spatula to spread it evenly into the corners. Then, squeeze handfuls of the crumb topping in your hands to make it stick together and lightly break it up over the apple cake. This will help create big crumb chunks.
- Bake in a 350* F oven for 40-43 minutes or until a toothpick inserted into the center of the crumb cake comes out clean.
- Allow the crumb cake to cool in the pan for 20 minutes, then gently move it to a cutting board to continue cooling.
- Dust with powdered sugar, if desired, slice and serve.1 tablespoon Powdered Sugar
