Ingredient Notes

Ingredients for making this recipe in small bowls on a linen surface.

Vegan Butter: I love Country Crock Plant Butter Sticks!

Applesauce: Applesauce keeps the cake really tender and moist. The applesauce will not make this coffee cake taste like apples. But if that sounds delicious to you, make my Vegan Apple Crumb Cake!

Sugar: You will need granulated sugar for the cake and brown sugar for the cinnamon streusel.

Non-Dairy Milk: I like oat milk, but any non-dairy milk will work.

Cinnamon: There is plenty of cinnamon in the swirl layer and in the streusel topping.

Instructions

Cinnamon streusel in a bowl.

Step 1. First, make the cinnamon streusel by combining flour, brown sugar, and cinnamon in a large bowl. Then, pour the melted non-dairy butter into the bowl and stir until the mixture is moist but crumbly.

Recipe FAQs

How should I store this Vegan Coffee Cake?

To store, place the cake into an airtight container and store it at room temperature for up to 4 days.
Or, freeze for up to a month.

Is there coffee in coffee cake?

Not traditionally. It's called coffee cake because it's served with a cup of coffee. But some people do like to add coffee to the batter!

What is cinnamon streusel?

Streusel is a crumble topping that is typically added to coffee cakes or muffins.
It bakes up nice and crunchy, which is a nice contrast to the soft baked good it tops. Sometimes it includes spices like cinnamon, and sometimes it doesn't!

Expert Recipe Tips

To get big pieces of streusel on top of the cake, take some streusel and squeeze it in the palm of your hand to make it stick together, then lightly break it up on top of the cake batter.

And don't forget to gently press the streusel into the coffee cake batter. This makes it stick to the cake through slicing and serving.
