Blackberry Banana Bread

Ingredients

  • 2 Cups All-Purpose Flour
  • 1 ¼ teaspoon Baking Powder
  • ½ teaspoon Baking Soda
  • ½ teaspoon Kosher Salt
  • 1 ¼ Cups Mashed Overripe Banana About 3 bananas
  • ½ Cup Granulated Sugar
  • ½ Cup Non-Dairy Milk
  • Cup Canola Oil
  • 2 teaspoon Vanilla Extract
  • 1 teaspoon White Vinegar
  • 1 Cup Fresh Blackberries, roughly chopped

To Top the Loaf

  • 1 ½ teaspoon Granulated Sugar

Instructions

  • Preheat oven to 350* F. Prepare an 8 ½-inch by 4 ½-inch loaf pan by greasing it and lining it with parchment paper.
  • In a medium bowl, combine flour, baking powder, baking soda, and salt. Stir to combine and set aside.
    2 Cups All-Purpose Flour, 1 ¼ teaspoon Baking Powder, ½ teaspoon Baking Soda, ½ teaspoon Kosher Salt
  • In a large bowl, combine mashed overripe banana, sugar, non-dairy milk, canola oil, vanilla, and vinegar. Stir to combine, then add the dry ingredients and stir to form the batter. See note!
    1 ¼ Cups Mashed Overripe Banana, ½ Cup Granulated Sugar, ½ Cup Non-Dairy Milk, ⅓ Cup Canola Oil, 2 teaspoon Vanilla Extract, 1 teaspoon White Vinegar
  • Add chopped blackberries and fold them into the batter until they are distributed.
    1 Cup Fresh Blackberries, roughly chopped
  • Scrape the batter into a prepared loaf pan and use the back of the spatula to spread it out evenly. Then, sprinkle the top of the loaf with granulated sugar.
    1 ½ teaspoon Granulated Sugar
  • Bake the blackberry banana bread in a 350*F oven for 57-65 minutes or until a toothpick inserted into the center of the loaf comes out clean.
  • Allow the loaf to cool for at least 30 minutes before slicing and serving.

Notes

Your bananas should be very brown for this recipe. I wait until they are at least ⅓ brown. Don't use bananas that just have brown spots on them. They will not be sweet enough.
The batter will look lumpy because of the pieces of banana, and that's okay! Don't overmix the batter in an attempt to smooth it out.
