Every time I buy bananas, at least a couple of them make it to the overripe stage, which is why I have so many banana recipes here on Earthly Provisions! I have classics like Vegan Banana Bread and Vegan Banana Muffins and more unique banana recipes like Vegan Banana Chocolate Chip Cookies, too!

And today, I'm adding a recipe that is a Summery twist on a classic: Blackberry Banana Bread. This loaf is just as easy to make and moist as a typical banana bread, but with the addition of fresh, juicy blackberries for a bright and fruity flavor. So let's make it!

Why You'll Love This Recipe

  • This recipe is easy to make and uses simple ingredients.
  • It requires no special equipment; all you need is a mixing bowl and a spatula!
  • This Blackberry Banana Bread is completely dairy-free and vegan, so anyone can enjoy it.
  • It is tender, moist, and backed with fresh blackberries.
  • And most importantly, it is absolutely delicious!

Ingredient Notes

Ingredients for making this recipe in small bowls on a linen surface.

Overripe Bananas: It is important to use overripe bananas for this recipe! The bananas should be mostly brown, not just spotty. I wait until my bananas are at least ⅓ brown before baking with them.

Blackberries: I only recommend fresh blackberries for this Blackberry Banana Bread recipe. If you have frozen blackberries, make my Blackberry Oat Bars instead!

Canola Oil: I used canola oil, but any neutral oil like vegetable oil or safflower oil works, too. Do not use coconut oil.

Non-Dairy Milk: I used oat milk, but any non-dairy milk works!

My Favorite Loaf Pan

I love this loaf pan by USA Pans. It is sturdy, bakes evenly, and has sharp corners, which I really like. And I've never had a loaf get stuck to it!

Instructions

Mashed banana in a mixing bowl with a rubber spatula.

Step 1. In a large mixing bowl, combine mashed overripe banana, granulated sugar, non-dairy milk, canola oil, vanilla, and white vinegar.

Stir well with a spatula.

Batter in a mixing bowl on a wooden surface.

Step 2. Add flour, baking powder, baking soda, and salt, and stir to form the batter.

Step 3. Add chopped blackberries and fold them into the batter until they are evenly distributed.

Step 4. Scrape the batter into a prepared 8 ½ by 4 ½ inch loaf pan.

Sprinkle granulated sugar on top of the batter and bake in a 350*F oven for 60-65 minutes or until a toothpick inserted into the center of the loaf comes out clean.

Recipe FAQs

How should I store this Blackberry Banana Bread?

To store, tightly wrap the loaf in plastic wrap or place it into an airtight container and store at room temperature for up to 4 days.
Or freeze for up to a month.

Can I substitute the blackberries for another berry?

Yes! Swap fresh blackberries out for blueberries or raspberries if that is what you have on hand.

Can I use frozen berries?

I don't recommend frozen blackberries for this recipe. They release more liquid during baking than fresh berries.

Expert Recipe Tips

The batter will look lumpy because of the pieces of banana, and that's okay! Don't overmix the batter in an attempt to smooth it out.

Sprinkling granulated sugar onto the batter just before baking creates a delightful, crackly top that is so delicious! But you can skip that step if you want to.

  • Add chopped blackberries and fold them into the batter until they are distributed.

Notes

Your bananas should be very brown for this recipe. I wait until they are at least ⅓ brown. Don't use bananas that just have brown spots on them. They will not be sweet enough.
The batter will look lumpy because of the pieces of banana, and that's okay! Don't overmix the batter in an attempt to smooth it out.
