Ingredient Notes

Overripe Bananas: It is important to use overripe bananas for this recipe! The bananas should be mostly brown, not just spotty. I wait until my bananas are at least ⅓ brown before baking with them.
Blackberries: I only recommend fresh blackberries for this Blackberry Banana Bread recipe. If you have frozen blackberries, make my Blackberry Oat Bars instead!
Canola Oil: I used canola oil, but any neutral oil like vegetable oil or safflower oil works, too. Do not use coconut oil.
Non-Dairy Milk: I used oat milk, but any non-dairy milk works!
My Favorite Loaf Pan
I love this loaf pan by USA Pans. It is sturdy, bakes evenly, and has sharp corners, which I really like. And I've never had a loaf get stuck to it!
Instructions

Step 1. In a large mixing bowl, combine mashed overripe banana, granulated sugar, non-dairy milk, canola oil, vanilla, and white vinegar.
Stir well with a spatula.

Step 2. Add flour, baking powder, baking soda, and salt, and stir to form the batter.

Step 3. Add chopped blackberries and fold them into the batter until they are evenly distributed.

Step 4. Scrape the batter into a prepared 8 ½ by 4 ½ inch loaf pan.
Sprinkle granulated sugar on top of the batter and bake in a 350*F oven for 60-65 minutes or until a toothpick inserted into the center of the loaf comes out clean.
Recipe FAQs
To store, tightly wrap the loaf in plastic wrap or place it into an airtight container and store at room temperature for up to 4 days.
Or freeze for up to a month.
Yes! Swap fresh blackberries out for blueberries or raspberries if that is what you have on hand.
I don't recommend frozen blackberries for this recipe. They release more liquid during baking than fresh berries.
Expert Recipe Tips
The batter will look lumpy because of the pieces of banana, and that's okay! Don't overmix the batter in an attempt to smooth it out.
Sprinkling granulated sugar onto the batter just before baking creates a delightful, crackly top that is so delicious! But you can skip that step if you want to.
