Ingredients

Blackberries: A whole pound of fresh blackberries makes the filling for these oat crumble bars! But if you have an excess of blueberries, you should try my Blueberry Crumble Bars.
Rolled Oats: Old-fashioned rolled oats are the perfect texture for this recipe! They create a super chewy crust and a crisp topping.
Cornstarch: Cornstarch thickens the blackberry filling, so don't skip it!
Agave Nectar: Agave nectar helps the oatmeal crumble to stick together. If you don't have agave, you can also use maple syrup.
Non-Dairy Butter: I used Country Crock Plant Butter Sticks, but use your favorite!
Step-by-Step Instructions

Step 1. First, bake the blackberry filling. In a 2-quart saucepan, combine blackberries, sugar, and water.
Then, place the saucepan over medium heat.

Step 2. Cook the mixture, stirring frequently and mashing the blackberries with a wooden spoon, until the mixture comes to a full boil and the blackberries are completely broken up. It will take about 7 minutes.
Then, stir the lemon juice and cornstarch in a small bowl and add it to the blackberry mixture while stirring constantly. Allow the mixture to boil for 1 minute, then remove from the heat and let it cool slightly while you make the oat crumble.

Step 3. To make the oatmeal crumble, combine rolled oats, flour, brown sugar, and baking powder in a large mixing bowl. Mix until well combined.
Then, add the melted non-dairy butter and agave nectar and stir until the mixture is combined. It will look crumbly, but should stick together when squeezed in your hand.

Step 4. Pour two-thirds of the oatmeal crumble into a prepared 8-by-8-inch square baking pan.
Press the crumble down firmly and evenly to form the crust.

Step 5. Next, pour the blackberry filling on top of the crust and spread it out evenly.

Step 6. Then, scatter the remaining oatmeal crumble on top of the blackberry layer and gently press it into the blackberry layer.
Bake the Blackberry Oat Bars in a 350*F oven for 34-37 minutes or until the edges are golden and bubbling.

- Preheat oven to 350*F. Grease an 8 x 8-inch square baking pan and line it with parchment. Do not skip lining the pan! It will be very hard to remove the bars to cut them without parchment.
Make the Blackberry Filling
- In a 2-quart saucepan, combine blackberries, granulated sugar, and water. - In a small bowl, combine lemon juice and cornstarch. Mix until no lumps remain, then pour into the blackberry mixture while stirring constantly. Allow the mixture to boil for one minute while stirring constantly, then remove the mixture from the heat and allow it to cool slightly while you make the oat crumble.1 ½ tablespoon Lemon Juice, 1 tablespoon Cornstarch
Make the Oat Crumble
