These Blackberry Oat Bars are packed with gooey, fresh blackberry filling and topped with a delicious oatmeal crumble that doubles as the crust! They are easy to make and perfect for berry season.

And today I'm sharing a bar recipe that is perfect for Summer: Blackberry Oat Bars! These oatmeal crumble bars are easy to make and have a simple blackberry filling that pairs so well with an oatmeal crust and crumble. This is the perfect way to use up some Summer berries! So let's make it.

Blackberries: A whole pound of fresh blackberries makes the filling for these oat crumble bars! But if you have an excess of blueberries, you should try my Blueberry Crumble Bars.

Rolled Oats: Old-fashioned rolled oats are the perfect texture for this recipe! They create a super chewy crust and a crisp topping.

Cornstarch: Cornstarch thickens the blackberry filling, so don't skip it!

Agave Nectar: Agave nectar helps the oatmeal crumble to stick together. If you don't have agave, you can also use maple syrup.

Non-Dairy Butter: I used Country Crock Plant Butter Sticks, but use your favorite!

Step-by-Step Instructions

Step 1. First, bake the blackberry filling. In a 2-quart saucepan, combine blackberries, sugar, and water.

Then, place the saucepan over medium heat.

Step 2. Cook the mixture, stirring frequently and mashing the blackberries with a wooden spoon, until the mixture comes to a full boil and the blackberries are completely broken up. It will take about 7 minutes.

Then, stir the lemon juice and cornstarch in a small bowl and add it to the blackberry mixture while stirring constantly. Allow the mixture to boil for 1 minute, then remove from the heat and let it cool slightly while you make the oat crumble.

Step 3. To make the oatmeal crumble, combine rolled oats, flour, brown sugar, and baking powder in a large mixing bowl. Mix until well combined.

Then, add the melted non-dairy butter and agave nectar and stir until the mixture is combined. It will look crumbly, but should stick together when squeezed in your hand.

Step 4. Pour two-thirds of the oatmeal crumble into a prepared 8-by-8-inch square baking pan.

Press the crumble down firmly and evenly to form the crust.

Step 5. Next, pour the blackberry filling on top of the crust and spread it out evenly.

Step 6. Then, scatter the remaining oatmeal crumble on top of the blackberry layer and gently press it into the blackberry layer.

Bake the Blackberry Oat Bars in a 350*F oven for 34-37 minutes or until the edges are golden and bubbling.

How should I store these Blackberry Oat Bars?

Place the oat bars into an airtight container and store at room temperature for up to 3 days.

Can I use quick or instant oats?

No. Only use old-fashioned rolled oats for this recipe. Quick oats and instant oats absorb differently and have a different texture than old-fashioned oats.

Can I use frozen blackberries?

Yes! Frozen blackberries work great for this recipe if you can't find fresh ones.

Expert Recipe Tips

Be sure to firmly and evenly press the oat crust into the baking pan! It is the foundation of the bars, so it needs to be sturdy.

Allow the bars to cool completely before slicing and serving. I know it is hard to wait, but the filling will be too gooey if you cut them warm. If you are impatient, stick them in the refrigerator for a bit!

  • 1 2 Quart Saucepan
  • 1 8x8 inch Square Baking Pan
  • 1 Large Mixing Bowl
  • Parchment Paper
  • Measuring Cups and Spoons

Ingredients
  

For the Blackberries

  • 1 Pound Fresh Blackberries
  • ¼ Cup Granulated Sugar
  • 2 tablespoon Water
  • 1 ½ tablespoon Lemon Juice
  • 1 tablespoon Cornstarch

For the Oat Crumble

  • 1 ½ Cups Rolled Oats
  • 1 ½ Cups All-Purpose Flour
  • ½ Cup Light Brown sugar, tightly packed
  • 1 teaspoon Baking Powder
  • 8 tablespoon Non-Dairy Butter, melted
  • 2 tablespoon Agave Nectar or Maple Syrup

Instructions
 

  • Preheat oven to 350*F. Grease an 8 x 8-inch square baking pan and line it with parchment. Do not skip lining the pan! It will be very hard to remove the bars to cut them without parchment.

Make the Blackberry Filling

  • In a 2-quart saucepan, combine blackberries, granulated sugar, and water. Place the saucepan over medium heat and cook, stirring and smashing the berries with the back of a wooden spoon until they are broken down and the mixture is boiling, about 7 minutes.
    1 Pound Fresh Blackberries, ¼ Cup Granulated Sugar, 2 tablespoon Water
  • In a small bowl, combine lemon juice and cornstarch. Mix until no lumps remain, then pour into the blackberry mixture while stirring constantly. Allow the mixture to boil for one minute while stirring constantly, then remove the mixture from the heat and allow it to cool slightly while you make the oat crumble.
    1 ½ tablespoon Lemon Juice, 1 tablespoon Cornstarch

Make the Oat Crumble

  • In a large mixing bowl, combine rolled oats, flour, brown sugar, and baking powder. Stir until well combined.
    1 ½ Cups Rolled Oats, 1 ½ Cups All-Purpose Flour, ½ Cup Light Brown sugar, tightly packed, 1 teaspoon Baking Powder
  • Add the melted non-dairy butter and agave nectar and stir until well combined. The mixture will look crumbly but should stick together when squeezed in your hand.
    8 tablespoon Non-Dairy Butter, melted, 2 tablespoon Agave Nectar

Layer and Bake the Oat Bars

  • Pour two-thirds of the oat mixture into a prepared 8x8-inch baking pan. Use your hands to firmly and evenly press the mixture into the pan.
  • Pour the blackberry filling onto the oat crust and spread it out evenly, then top with the remaining oat crumble mixture.
  • Bake the blackberry oat bars in a 350*F oven for 34-37 minutes, or until the edges are golden and bubbling.
  • Allow the bars to cool completely before removing them from the baking pan, slicing, and serving.
