For the Lavender Simple Syrup
- 1 Cup Sugar
- 1 Cup Water
- 4 teaspoon Dried Lavender Flowers
For the Mocktail
- ¼ Cup Fresh Blueberries
- 1 tablespoon Lemon Juice
- 1 tablespoon Lavender Simple Syrup
- ¾ Cup Club Soda
- Ice
Make the Lavender Simple Syrup
In a 1-quart saucepan, combine sugar, water and lavender flowers. Place the pan over medium heat and bring the mixture to a boil, stirring occasionally. Allow the mixture to boil for 1 minute.
1 Cup Sugar, 1 Cup Water, 4 teaspoon Dried Lavender Flowers
Remove the pot from heat and place a lid on top. Allow the mixture to steep for 15 minutes. The, pour the syrup into a container through a fine mesh strainer. Use the back of a spoon to press the flowers to release any syrup they are holding onto.
Use immediately, or store in the refrigerator for up to 2 weeks.
Make the Blueberry Lavender Mocktail
In the bottom of a tall glass, combine blueberries and lemon juice. Use a spoon to gently muddle the blueberries. Take your time and break them up really well.
¼ Cup Fresh Blueberries, 1 tablespoon Lemon Juice
Add the lavender syrup, club soda and ice into the glass. Gently stir and serve!
