- 1 Cup Creamy Natural Peanut Butter
- ¾ Cup Light Brown Sugar, tightly packed
- ½ Cup Non-Dairy Milk I used oat milk, but any non-dairy milk will work
- 1 teaspoon Vanilla Extract
- 1 ¼ Cups Homemade Oat Flour See note!
- 1 ½ tsp Baking Powder
- ½ teaspoon Kosher Salt
- 1 ½ Cups Chocolate Chips, divided
First Make the Oat Flour
Add gluten-free rolled oats to a blender or food processor. Process the oats on high until they reach a flour-like consistency. Do not use all of the oat flour. Measure the oat flour for the blondies from here.

Make the Gluten-Free Blondies
Preheat oven to 350*F. Prepare a 8x8-inch square baking pan by greasing it with shortening or pan spray and inserting a parchment sling.
In a large bowl add the peanut butter and brown sugar. Stir until combined using a rubber spatula. Then, add non-dairy milk and vanilla, and mix until smooth and creamy.
1 Cup Creamy Natural Peanut Butter, ¾ Cup Light Brown Sugar, tightly packed, ½ Cup Non-Dairy Milk, 1 tsp Vanilla Extract
Add homemade oat flour, baking powder and salt into the bowl and stir to combine. The mixture will be really thick here! Then add 1 cup of chocolate chips and mix to distribute.
1 ¼ Cups Homemade Oat Flour, 1 ½ tsp Baking Powder, ½ tsp Kosher Salt, 1 ½ Cups Chocolate Chips, divided
Scrape batter into a prepared baking pan and press out evenly with a spatula. Top the blondies with the remaining ½ cup of chocolate chips and press them into the batter.
Bake in a 350*F oven for 28-30 minutes, turning the pan halfway through. They are done when the edges are golden brown.
Let cool completely before cutting and serving.
Once the homemade oat flour is made, measure 1 ¼ cups of oat flour for the blondies using the spoon-and-level method. Do not use all of the oat flour you made!
To store: place the blondies in an airtight container and keep at room temperature for up to 4 days. Or freeze for up to a month.
