For the Lavender Syrup
- 1 Cup Sugar
- 1 Cup Water
- 4 teaspoon Dried Lavender Flowers
For the Gimlet
- 2 Ounces Gin
- .75 Ounces Fresh Lime Juice
- .75 Ounces Lavender Simple Syrup
For the Lavender Simple Syrup
In a 1-quart saucepan, combine sugar, water and lavender flowers. Place the saucepan over medium heat and bring the mixture to a boil, stirring occasionally. Once the mixture boils, allow it to boil for 1 minute.
1 Cup Sugar, 1 Cup Water, 4 teaspoon Dried Lavender Flowers
Remove the syrup from heat and place a lid on the pot. Allow it to steep for 15 minutes.
Remove the lid and pour the syrup into a container through a fine mesh strainer. Use the back of a spoon to press the lavender flowers to squeeze and remaining syrup from them. Place a lid onto the container and store in the refrigerator for up to 2 weeks.
Make the Gimlet
Add the gin, lime juice and lavender syrup into a cocktail shaker that is filled with ice. Place the lid on and shake vigorously for 15 seconds.
2 Ounces Gin, .75 Ounces Fresh Lime Juice, .75 Ounces Lavender Simple Syrup
Strain the cocktail into a coupe glass, garnish with a lime wheel and serve.
Shake the cocktail for about 15 seconds for proper dilution! Your hands should feel very cold.
I serve this Lavender Gimlet straight up, which means without ice. But, it's also great over ice!
