This Lavender Gimlet is the perfect easy cocktail recipe! It combines gin, lime juice and lavender simple syrup for a well-balanced, flavorful cocktail anyone will enjoy.

And this Lavender Gimlet is no exception! It is packed with flavor from gin, fresh lime juice and homemade lavender syrup. And, I even like to make the lavender simple syrup a day or two in advance and then I have have a cocktail in minutes!

Ingredients
Gin: My favorite Drumshanbo Irish Gin. But, use your favorite gin.
Dried Lavender: Dried lavender flowers flavor the lavender syrup. Be sure that you get culinary grade lavender. There should be no added fragrances or flavorings.
Lime Juice: Fresh lime juice only, please! This Lavender Gimlet cocktail only has a few ingredients, so take the time to squeeze the limes.
Instructions
Step 1. First, make the lavender simple syrup by combining sugar, water and dried lavender flowers in a small saucepan over medium heat.
Bring the mixture to a boil and allow it to boil for 1 minute.
Then, remove from heat, place a lid on the pot and allow the lavender to steep for 15 minutes.
Step 2. Next, pour the syrup into a container through a fine mesh strainer to remove the flowers.
Then, use the back of a spoon to press the flowers to release any liquid they are holding onto.
Pour into a container with a tight-fitting lid and store in the refrigerator for up to 2 weeks.
Step 3. Add the gin, lime juice and lavender simple syrup into a cocktail shaker filled with ice.
Step 4. Shake the cocktail vigorously for 15 seconds, then strain into a coupe glass.
Top with a lime wheel to garnish and serve the Lavender Gimlet!

Ingredients
For the Lavender Syrup
- 1 Cup Sugar
- 1 Cup Water
- 4 teaspoon Dried Lavender Flowers
For the Gimlet
- 2 Ounces Gin
- .75 Ounces Fresh Lime Juice
- .75 Ounces Lavender Simple Syrup

For the Lavender Simple Syrup
- In a 1-quart saucepan, combine sugar, water and lavender flowers. Place the saucepan over medium heat and bring the mixture to a boil, stirring occasionally. Once the mixture boils, allow it to boil for 1 minute.1 Cup Sugar, 1 Cup Water, 4 teaspoon Dried Lavender Flowers
- Remove the syrup from heat and place a lid on the pot. Allow it to steep for 15 minutes.
- Remove the lid and pour the syrup into a container through a fine mesh strainer. Use the back of a spoon to press the lavender flowers to squeeze and remaining syrup from them. Place a lid onto the container and store in the refrigerator for up to 2 weeks.
Make the Gimlet
- Add the gin, lime juice and lavender syrup into a cocktail shaker that is filled with ice. Place the lid on and shake vigorously for 15 seconds.2 Ounces Gin, .75 Ounces Fresh Lime Juice, .75 Ounces Lavender Simple Syrup
- Strain the cocktail into a coupe glass, garnish with a lime wheel and serve.
