    This Vegan Matcha White Chocolate Chip Cookies recipe is easy to make and yeilds cookies that is a crisp edge with a super chewy interior. And the combination of white chocolate chips and matcha tastes like a matcha latte! Best of all this recipe only requires 9 ingredients and no chill time!

    I love to bake with tea. It is such a fun way to add flavor to baked goods. Earl Grey tea is delicious in Earl Grey Scones or in a Vegan Earl Grey Yogurt Cake. And matcha tea makes an absolutely delicious Vegan Matcha Cake. And its also delicious in these Vegan Matcha White Chocolate Cookies.

    What is Matcha?

    Matcha powder is green tea leaves that are finely ground. It has more caffeine than most other teas because matcha is grown in the shade which causes the plant to produce more caffeine.

    Matcha powder is typically whisked directly into hot water or milk rather than steeped like other types of tea.

    Ingredients needed for making this recipe on a marble surface.

    Vegan Butter: I always recommend Soy-Free Earth Balance and Country Crock Plant Butter.

    Matcha Powder: Matcha powder gives this cookie recipe flavor and also gives the cookies their green color. Be sure you use ceremonial grade matcha powder like you'd use for a Vanilla Matcha Latte.

    Baking Soda: Baking soda is what helps these cookies spread and gives them their crisp edge and super chewy interior.

    Vegan White Chocolate Chips: Usually, I'm more of a dark chocolate person. I can't get enough Vegan Chocolate Chip Cookies. But, sometimes a cookie needs white chocolate. So, I like Enjoy Life Mini White Chips for this Vegan Matcha Cookies recipe.

    Step-by-Step Instructions

    Vegan butter and sugar creamed together in a mixing bowl.

    Step 1. First, cream the vegan butter and sugar together until well combined and fluffy.

    Non-dairy milk and vanilla mixed into the butter mixture.

    Step 2. Then, add the non-dairy milk and vanilla and mix until combined.

    Matcha powder, and dry ingredients mixed into the sugar cookie dough.

    Step 3. Next, add the flour, matcha powder, baking soda and salt and stir to form the matcha cookie dough.

    Step 4. Now, add mini white chocolate chips and stir to distribute.

    Step 5. Scoop the cookies onto a parchment lined baking sheet and top each cookie with a few more white chocolate chips.

    Step 6. Finally, bake these Vegan Matcha White Chocolate Cookies until the edges are set. Allow them to cool on the baking sheet for 5 minutes before transferring them to a cooling rack to cool completely.

    To store these cookies, place them into an airtight container and store at room temperature for up to 4 days.
    Or freeze for up to a month.

    What does matcha taste like?

    Matcha tastes very earthy. It has the same earthy flavor as other types of green tea, but it is more intense.

    What white chocolate is vegan?

    There are a few brands out there, but my are the Enjoy Life Mini White Chocolate Chips.

    Equipment

    • 1 Large Mixing Bowl
    • 1 Hand Mixer or Stand Mixer with the paddle attachment
    • 1 Rubber Spatula
    • 1 3 Tablespoon Cookie Scoop
    • 1 Baking Sheet
    • Parchment Paper
    • Measuring Cups and Spoons

    Ingredients
      

    • 8 tablespoon Vegan Butter
    • 1 Cup Granulated Sugar
    • ¼ Cup Non-Dairy Milk
    • 2 teaspoon Vanilla Extract
    • 1 ¾ Cup All Purpose Flour
    • 1 tablespoon Matcha Powder see note
    • ¾ teaspoon Baking Soda
    • ½ teaspoon Kosher Salt half this amount if using table salt
    • ½ Cup Mini Vegan White Chocolate Chips (plus more for topping) see note

    Instructions
     

    • Preheat oven to 350* F. Line a baking sheet with parchment paper.
    • In a large bowl using a hand mixer, or in the bowl of a stand mixer fitted with the paddle attachment, cream the vegan butter and sugar until well combined and fluffy.
      8 tablespoon Vegan Butter, 1 Cup Granulated Sugar
    • Add the non-dairy milk and vanilla and mix until well combined.
      ¼ Cup Non-Dairy Milk, 2 teaspoon Vanilla Extract
    • Add the flour, matcha powder, baking soda and salt and mix on low just until the dough comes together. Then, add the chocolate chips and stir to distribute.
      1 ¾ Cup All Purpose Flour, 1 tablespoon Matcha Powder, ¾ teaspoon Baking Soda, ½ teaspoon Kosher Salt, ½ Cup Mini Vegan White Chocolate Chips (plus more for topping)
    • Scoop the cookie dough with a 3 tablespoon cookie dough scoop onto a parchment-lined baking sheet. Be sure to leave about 3 inches of space between each cookie. I like to bake 8 cookies at a time.
    • Top each cookie dough ball with a few extra chocolate chips, then bake in a 350* oven for 13-16 minutes, or until the edges of the cookies feel set to the touch.
    • Allow the cookies to cool of the baking sheet for 5 minutes, then transfer them to a wire cooling rack to continue cooling.
    • Repeat with the remaining cookie dough.

    Notes

    Be sure to use 100% matcha powder, NOT matcha latte mix!
    My favorite brand of vegan mini white chips is Enjoy Life.
