Ingredients
Orange Zest and Juice: When I make orange recipes like my Vegan Orange Olive Oil Cake or Vegan Cranberry Orange Scones, I never use orange extract! Fresh orange zest and juice is super flavorful and is all you need. Be sure to zest the whole orange before juicing it.
Ground Cardamom: Cardamom adds a delightful warm and floral flavor the the cookies and it pairs so well with orange. If you love it too, try my Vegan Orange Cardamom Loaf Cake!
Vegan Butter: I used Country Crock Plant Butter Sticks. They are easy to find and taste great!
Instructions
Step 1. In a large bowl using a hand mixer, or in the bowl of a stand mixer fitted with the paddle attachment, cream non-dairy butter, sugar and orange zest until well combined and fluffy.
Then, add non-dairy milk and vanilla and mix on low to combine.
Step 2. Now, add the flour, cardamom, baking soda and salt and mix on low to form the cookie dough.
Step 3. Use a 3-tablespoon cookie scoop to scoop cookie dough balls onto a parchment-lined baking sheet, leaving at least 2 ½ inches of space between each cookie.
Bake in a 350* F oven for about 12 minutes, or until the cookies are just barely golden around the edges.
Allow the Orange Cardamom Cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
Step 4. Once the cookies are cool, make the orange glaze. In a medium bowl, combine powdered sugar, orange juice and orange zest. Whisk until the glaze is completely smooth.
Finally, use a spoon to drizzle the orange glaze over the cookies. Allow the glaze to set for 30 minutes, then serve!
