This Strawberry Simple Syrup recipe is perfect for drinks and cocktails! You only need 3 ingredients and 20 minutes to make it and it's absolutely packed with fresh strawberry flavor.
I love baking with strawberries. I'll put them into a Vegan Peach Strawberry Galette, or use them to top a Vegan Fruit Tart, or I'll use them to make one of my all-time favorites: Vegan Strawberry Crunch Cake.
But, I needed a way to add strawberries to drinks and cocktails, too, so this Strawberry Simple Syrup was born! Not only is this recipe quick and easy, but it's also delicious in any drink you can dream up.

Ingredient Notes
Granulated Sugar: Be sure to use white granulated sugar for this recipe. Don't substitute any other type of sweetener.
Strawberries: Strawberries are in season for me right now so I used fresh for my Strawberry Simple Syrup. But, you can use frozen if they aren't in season in your area.
Lemon Juice: A bit of lemon juice cuts the sweetness and brings out the berry flavor.
Step-by-Step Instructions
Step 1. In a medium saucepan, combine granulated sugar, water and chopped strawberries. Give the mixture a good stir.
Step 2. Bring the mixture to a boil, then reduce the heat to low and simmer the mixture for 20 minutes.
Step 3. Remove the mixture from heat and add the lemon juice. Then, use an immersion blender to blend the mixture until smooth.
Step 4. Pour the Strawberry Simple Syrup into a heat-safe container and allow it to cool before placing it into the refrigerator or using it in your favorite drinks and cocktails!
Uses
- Use it to make a strawberry matcha.
- Or make delicious Strawberry Mojitos.
- Add to iced black tea for a perfect Summertime strawberry sweet tea.
- Or pour a couple of tablespoons into seltzer water for a light and refreshing drink!
Recipe FAQs
To store, pour the finished syrup into a container with an airtight lid and store it in the refrigerator.
This syrup should last in the refrigerator for about 2 weeks.

Ingredients
- 1 Cup Granulated Sugar
- 1 Cup Water
- 8 oz Fresh Strawberries, hulled and roughly chopped See Note
- 1 tablespoon Lemon Juice
Instructions
- In a 2 quart saucepan, combine sugar, water and strawberries. Stir well, then place over medium heat until the mixture comes to a boil.1 Cup Granulated Sugar, 1 Cup Water, 8 oz Fresh Strawberries, hulled and roughly chopped
- Reduce heat to low and allow the mixture to simmer for 20 minutes.
- Remove from heat and add the lemon juice, then use an immersion blender to blend until smooth. See note!1 tablespoon Lemon Juice
- Pour the mixture into a heat safe container and allow to cool before placing into the refrigerator or using in your drink or cocktail.
