This Pineapple Jalapeño Margarita recipe is an easy and delicious cocktail recipe. And if you don't like spicy drinks, simply leave the jalapeño out for delicious pineapple margaritas!

I love a simple-to-make and refreshing cocktail in the summertime. I especially love my Sparkling Margaritas with Lime Salt, Strawberry Mojito and Lillet Blanc Spritz. They are all bright, refreshing and delicious and don't require many ingredients.
And this Pineapple Jalapeño Margarita is no exception. It is tropical, a bit spicy and so tasty. And it is simple to make! I like to serve these to friends at a cookout, or as a weekend cocktail with dinner.

Ingredients
Tequila Blanco: My favorite brands of tequila blanco are Espolon and Olmeca Altos. You can also use tequila reposado if you prefer it.
Triple Sec: I love to use Cointreau! It is expensive, but I think you can taste the difference.
Jalapeño: The spice in this Pineapple Margarita comes from fresh jalapeño! But, if you don't like spice, you can skip it.
Pineapple Juice: Pineapple juice is so delicious in cocktails and mocktails like my Pineapple Mojito Mocktail! It adds a delicious tropical flavor to these margaritas.
Lime Juice: Fresh lime juice, please! The stuff in the bottle never tastes the same.
Tajín: Tajín is optional, but I love to use it on the rim of my glasses. It is tart and spicy. You can also use kosher salt!
Instructions
Step 1. Add the Tajín to a small plate. Then, rub the rim of two glasses with a lime wedge.
Turn the glasses upside down and dip them into the Tajín. Set aside.
Step 2. Place the jalapeño into a cocktail shaker. Muddle it gently to break it up.
Then, fill the shaker with ice and add the pineapple juice, tequila, lime juice and triple sec. Place the lid on the shaker and shake for 1 minute.
Fill the two Tajín rimmed glasses with ice. And finally, strain the Pineapple Jalapeño Margarita into the glasses.

Tequila Blanco is tequila that has not been aged and is clear and colorless.

- ¾ Cup Pineapple Juice
- ½ Cup Tequila Blanco
- ¼ Cup Lime Juice
- 2 tablespoon Cointreau Or other brand of triple sec
- Plenty of Ice
- Slices of lime, jalapeño and pineapple to garnish optional

- Into a metal cocktail shaker, add the chopped jalapeño. Muddle the jalapeño to break it up.1 tablespoon Chopped Jalapeño

Do you leave the seeds in when you muddle the jalapeño?

It depends on how spicy you want it! The seeds typically have a lot of spice so remove them if you are sensitive to spice. My jalapeño was SPICY so I removed the seeds.
