So, it's about time that I started adding strawberries to cocktails and drinks! And what better place to start than this Strawberry Mint Mojito? This mojito is full of fresh mint, muddled lime and a strawberry simple syrup that jam-packed with flavor! So let's make it.

Ingredients

Mint: Fresh mint is muddled to release its flavor.
Fresh Strawberries: Strawberries are simmered in simple syrup, then blended to make a flavor-packed strawberry syrup.
Lime: Be sure to use fresh lime. They are a crucial ingredient for these Strawberry Mint Mojitos! And if you love a citrusy cocktail, fry my French Gimlet!
Instructions
Step 1. In a medium saucepan, combine sugar, water and strawberries. Place over medium heat and bring the mixture to a boil, them reduce heat to low and allow the mixture to simmer for 20 minutes.
Step 2. Remove from heat and add the lemon juice. Then, blend the mixture until smooth using an immersion blender. Pour the strawberry syrup into a heat-proof jar to cool.
Step 3. Add mint leaves and lime wedges to the bottom of a sturdy glass. Gently muddle with a muddler or a wooden spoon to bruise the mint and release some lime juice.
Step 4. Add rum and strawberry syrup and stir. Then fill the glass with ice and top with soda water. Stir once more, garnish with mint and serve.
Expert Recipe Tips
If you are using a glass drinking vessel, be very careful when muddling the mint and lime!
If you don't have an immersion blender, allow the strawberry mixture to cool for 20 minutes, then pour it into a blender and blend until smooth.

Strawberry Mint Mojito
Equipment
- 1 1 Quart Saucepan
- 1 Immersion Blender
- 1 Jigger
- 1 Muddler (or a wooden spoon)
Ingredients
For the Strawberry Syrup
- ½ Cup Sugar
- ½ Cup Water
- 4 Ounces Strawberries, hulled and roughly chopped See Note
For 1 Strawberry Mint Mojito
- ½ Medium Lime, cut into 4 pieces
- 10 Medium Mint Leaves
- 1 ½ Ounces White Rum
- 1 Ounce Strawberry Syrup
- 3 Ounces Club Soda
Instructions
Make the Strawberry Syrup
- In a 1 quart saucepan, combine sugar, water and chopped strawberries. Stir the mixture, then place over medium heat and bring to a boil. Reduce the heat to a simmer and allow to simmer for 15 minutes.½ Cup Sugar, ½ Cup Water, 4 Ounces Strawberries, hulled and roughly chopped
- Remove from heat and use an immersion blender to blend the mixture until smooth. Pour the strawberry syrup into a heat-safe container and allow it to cool for at least 30 minutes.
Make a Mojito
- Into the bottom of a glass, add all four pieces of lime and 10 mint leaves. Use a muddler or a wooden spoon to gently bruise the mint and to extract some juice from the limes.½ Medium Lime, cut into 4 pieces, 10 Medium Mint Leaves
- Add the rum and strawberry syrup into the glass and stir. Then, fill the glass with ice and top with club soda. Stir once more, garnish with mint and serve.1 ½ Ounces White Rum, 1 Ounce Strawberry Syrup, 3 Ounces Club Soda
