Strawberry Simple Syrup

1 2 Quart Saucepan
1 Immersion Blender
Measuring Cups
- 1 Cup Granulated Sugar
- 1 Cup Water
- 8 oz Fresh Strawberries, hulled and roughly chopped See Note
- 1 tablespoon Lemon Juice
In a 2 quart saucepan, combine sugar, water and strawberries. Stir well, then place over medium heat until the mixture comes to a boil.

Reduce heat to low and allow the mixture to simmer for 20 minutes.
Remove from heat and add the lemon juice, then use an immersion blender to blend until smooth. See note!
1 tablespoon Lemon Juice
Pour the mixture into a heat safe container and allow to cool before placing into the refrigerator or using in your drink or cocktail.
8 oz of fresh strawberries will be about 1 ½ Cups chopped strawberries.
You can also use frozen strawberries for this recipe.
If you don't have an immersion blender, allow the mixture to cool, then pour it into a blender and blend until smooth. Do not blend the mixture when it's hot- it is dangerous to blend hot items.
I do not recommend using a food processor to blend.
