Spiced Roasted Sweet Potatoes

Ingredients

  • 1 ½ Pounds Sweet Potato about 2 large sweet potatoes
  • ¼ Cup Extra Virgin Olive Oil
  • 1 ½ teaspoon Garlic Powder
  • 1 teaspoon Crushed Red Pepper see note
  • ¾ teaspoon Ground Cinnamon
  • ½ teaspoon Ground Nutmeg
  • ¾ teaspoon Kosher Salt half this amount if using table salt
  • Black Pepper

Instructions

  • Preheat oven to 425* F.
  • Peel the sweet potatoes and dice into ¾" cubes.
    1 ½ Pounds Sweet Potato
  • Place the sweet potatoes onto the baking sheet. Add the olive oil, garlic powder, crushed red pepper flakes, cinnamon, nutmeg, salt and pepper. Toss with your hands until everything is evenly coated.
    ¼ Cup Extra Virgin Olive Oil, 1 ½ teaspoon Garlic Powder, 1 teaspoon Crushed Red Pepper, ¾ teaspoon Ground Cinnamon, ½ teaspoon Ground Nutmeg, ¾ teaspoon Kosher Salt, Black Pepper
  • Roast the potatoes for 37-40 minutes, or until the potatoes are browned, stopping to stir the potatoes half way through. Serve!

Notes

If you don't like spice, you can reduce or completely leave out the crushed red pepper.
Don't line the baking sheet with parchment paper. It will soak up some of the oil and prevent the potatoes from getting crispy.
Don't skimp on the oil! I know ¼ cup sounds like a lot, but spices soak up a lot of oil to bloom. If you skimp on the oil, the spices may be gritty and they won't be as flavorful.
