Ingredients

Non-Dairy Butter: I love Country Crock Plant Butter Sticks. They taste great and are easy to find.
Brown Sugar: Brown sugar adds so much rich, warm flavor.
Non-Dairy Milk: I used oat milk, but any non-dairy milk will work.
Chocolate Chips: I like to really pack these Vegan Blondies with chocolate chips. I love Trader Joe's chocolate chips, but use your favorite here. Just make sure they are dairy-free!
Instructions

Step 1. In the bowl of a stand mixer fitted with the paddle attachment, cream vegan butter and brown sugar until light and fluffy.

Step 2. Then, add non-dairy milk and vanilla and mix on low until well combined.

Step 3. Add flour, baking powder, and salt, and mix to form the dough.
Then, add chocolate chips and stir to distribute.

Step 4. Scoop the vegan blondie dough into a prepared 8-inch square baking pan. Then use a spatula to spread the dough out evenly, and top it with a few more chocolate chips.
Bake in a 350*F oven for 25-28 minutes or until the edges are lightly golden.
Allow the blondies to cool before cutting them into squares and enjoying!
