These Vegan Blondies are soft, chewy, and packed with chocolate chips. They are easy to make and only require 8 simple, dairy-free ingredients. They are like a super thick chocolate chip cookie!

Some desserts are just better in bar form. There is something about a tangy Lemon Cookie Bar, or a soft and chewy Gluten-Free Peanut Butter Blondie, or a slice of rich and decadent Vegan Millionaires Shortbread. They are irresistible!

And these Vegan Blondies are my new favorite! They are soft, chewy, and studded with plenty of chocolate chips. And they only require 8 ingredients that I always have on hand, so I can whip a batch up whenever I need a sweet treat. So, let's make them!

Non-Dairy Butter: I love Country Crock Plant Butter Sticks. They taste great and are easy to find.

Brown Sugar: Brown sugar adds so much rich, warm flavor.

Non-Dairy Milk: I used oat milk, but any non-dairy milk will work.

Chocolate Chips: I like to really pack these Vegan Blondies with chocolate chips. I love Trader Joe's chocolate chips, but use your favorite here. Just make sure they are dairy-free!

Instructions

Creaming vegan butter and brown sugar in a glass bowl.

Step 1. In the bowl of a stand mixer fitted with the paddle attachment, cream vegan butter and brown sugar until light and fluffy.

Non-dairy milk and vanilla added to the bowl.

Step 2. Then, add non-dairy milk and vanilla and mix on low until well combined.

Dough with chocolate chips in a glass mixing bowl.

Step 3. Add flour, baking powder, and salt, and mix to form the dough.

Then, add chocolate chips and stir to distribute.

Vegan Blondies in an 8-inch square baking pan.

Step 4. Scoop the vegan blondie dough into a prepared 8-inch square baking pan. Then use a spatula to spread the dough out evenly, and top it with a few more chocolate chips.

Bake in a 350*F oven for 25-28 minutes or until the edges are lightly golden.

Allow the blondies to cool before cutting them into squares and enjoying!

Place the blondies into a container with an airtight lid and store them at room temperature for up to 5 days.
Or, freeze for up to a month.

Can I make blondies without eggs?

Yes! The eggs are just binding ingredients in blondie recipes, so they can easily be swapped out for non-dairy milk, applesauce, or flax eggs.

What is the difference between a blondie and a brownie?

Brownies are made with cocoa powder to be chocolatey throughout. Blondies are like a chocolate chip cookie in bar form!

  • 1 Stand Mixer with Paddle Attachment
  • 1 8-inch Square Baking Pan
  • Measuring Cups and Spoons
  • 1 Spatula

Ingredients
  

  • 10 tablespoon Non-Dairy Butter, room temperature
  • 1 Cup Dark Brown Sugar, tightly packed
  • ⅓ Cup Non-Dairy Milk
  • 2 teaspoon Vanilla Extract
  • 2 Cups All-Purpose Flour
  • 1 ¾ teaspoon Baking Powder
  • ½ teaspoon Kosher Salt
  • 1 Cup Chocolate Chips Plus a few more for topping!

Instructions
 

  • Preheat oven to 350*F. Grease an 8-inch square baking pan and line it with parchment paper.
  • In the bowl of a stand mixer fitted with the paddle attachment, cream non-dairy butter and dark brown sugar until light and fluffy.
    10 tablespoon Non-Dairy Butter, room temperature, 1 Cup Dark Brown Sugar, tightly packed
  • Add non-dairy milk and vanilla and mix on low until well combined.
    ⅓ Cup Non-Dairy Milk, 2 teaspoon Vanilla Extract
  • Next, add flour, baking powder, and salt, and mix on low until just combined. Then, add chocolate chips and mix until distributed.
    2 Cups All-Purpose Flour, 1 ¾ teaspoon Baking Powder, ½ teaspoon Kosher Salt, 1 Cup Chocolate Chips
  • Scrape the blondie dough into a prepared 8-inch square baking pan and use an offset spatula to spread it out evenly. Top the dough with a few more chocolate chips and gently press them in.
  • Bake the blondies in a 350*F oven for 26-29 minutes or until the edges are golden brown.
  • Allow the blondies to cool, then slice them into squares and enjoy!

Notes
