I love to bake with tea. It is such a fun way to add flavor to baked goods. Earl Grey tea is delicious in Earl Grey Scones or in a Vegan Earl Grey Yogurt Cake. And adding some matcha powder to cake batter makes an absolutely delicious Vegan Matcha Cake.
And it's also so delicious in these Vegan Matcha White Chocolate Cookies! These cookies are so easy to make and are so tasty. The matcha powder lends an earthy green tea flavor that comes together with white chocolate chips to create a cookie that tastes like a matcha latte. So let's make them.

What is Matcha?
Matcha powder is green tea leaves that are finely ground. It has more caffeine than most other teas because matcha is grown in the shade, which causes the plant to produce more caffeine.
Matcha powder is typically whisked directly into hot water or milk rather than steeped like other types of tea.
Ingredient Notes

Vegan Butter: I always recommend Soy-Free Earth Balance or Country Crock Plant Butter Sticks.
Matcha Powder: Matcha powder gives this cookie recipe flavor and also gives the cookies their green color. Be sure you use ceremonial grade matcha powder, like you'd use for a Vanilla Matcha Latte.
Baking Soda: Baking soda is what helps these cookies spread and gives them their crisp edge and super chewy interior.
Vegan White Chocolate Chips: I like Enjoy Life Mini White Chips for this Vegan Matcha Cookies recipe.
Step-by-Step Instructions

Step 1. First, in the bowl of a stand mixer fitted with the paddle attachment, cream the non-dairy butter, sugar, and matcha powder together until well combined and fluffy.

Step 2. Then, add the non-dairy milk and vanilla and mix on low speed until combined.

Step 3. Next, add the flour, baking soda, and salt, and mix on low to form the cookie dough.
Then, add mini white chocolate chips and stir to distribute.

Step 4. Scoop the cookies onto a parchment-lined baking sheet and top each cookie with a few more white chocolate chips.
Then, bake the Matcha White Chocolate Chip Cookies in a 350*F oven for 13-15 minutes or until the edges of the cookies feel set to the touch.
Recipe FAQs
To store these cookies, place them into an airtight container and store at room temperature for up to 4 days.
Or freeze for up to a month.
Matcha tastes very earthy. It has the same earthy flavor as other types of green tea, but it is more intense.
There are a few brands out there, but my favorite are the Enjoy Life Mini White Chocolate Chips.
Expert Recipe Tips
Be sure to use matcha powder, not matcha latte mix!
For evenly sized and perfectly round cookies, use a cookie scoop! My favorite size scoop is three tablespoons.
