    This Vegan Orange Olive Oil Cake recipe is simple and delicious! The cake is moist and tender and full of fresh orange zest and juice. Best of all, it requires no cake-decorating skills! Just dust a little powdered sugar over the cake and it's ready to serve.

    Single-layer cakes are the best quick and easy desserts. Sometimes they need a quick frosting, like my Vegan Matcha Cake, or a dollop of whipped cream like my Vegan Honey Cake. And other times they need just a few pieces of fresh fruit to decorate like my Vegan Olive Oil Cake. It doesn't get easier than that!

    And this Vegan Orange Olive Oil Cake is the easiest of them all. The cake comes together right in a bowl using a whisk and bakes up so incredibly tender and moist. Then, it just needs a little dusting of powdered sugar and it's ready to serve!

    Extra Virgin Olive Oil: Use an olive oil that you enjoy cooking with and drizzling on top of salads to make this Vegan Orange Olive Oil Cake. I like many different brands, but lately, I've been using Graza and Partanna.

    Fresh Orange Zest and Juice: When I make orange desserts, like Orange Cardamom Cookies or Vegan Orange Cardamom Loaf Cake I don't use any orange flavor or extract! All the orange flavor comes from the orange zest, but I use the juice in the recipe, too! Grab two oranges, just in case your orange isn't as juicy as mine was.

    Non-Dairy Milk: I like oat milk, but any non-dairy milk will work for this recipe.

    Instructions

    Step 1. In a large mixing bowl, combine sugar, non-dairy milk, olive oil, orange juice, orange zest and vanilla. Whisk to combine.

    Step 2. Add the flour, baking powder, baking soda and salt and whisk to form the batter.

    Step 3. Pour the batter into a prepared 8-inch round cake pan.

    Step 4. And finally, bake the Vegan Orange Olive Oil Cake in a 350* F oven for about 40 minutes. Allow the cake to cool completely before dusting with powdered sugar and serving.

    How should I store this Vegan Orange Olive Oil Cake

    To store, wrap the cake with plastic wrap, or place it into an airtight container and store it at room temperature for up to 3 days.
    Or freeze for up to a month.

    What does olive oil do to a cake?

    Olive oil provides moisture and flavor to a cake. The fat from the olive oil keeps the cake moist and tender while adding a mild olive oil flavor.

    Expert Recipe Tips

    When adding the dry ingredients to the wet ingredients, whisk just until the batter is formed. Over-mixing can cause your cake to be tough!

    • 1 Large Mixing Bowl
    • 1 Whisk
    • 1 8" Round Cake Pan
    • Parchment Paper
    • Measuring Cups and Spoons

    Ingredients
      

    • 1 ¾ Cups All-Purpose Flour
    • 1 ½ teaspoon Baking Powder
    • ¼ teaspoon Baking soda
    • ½ teaspoon Kosher Salt use ¼ teaspoon if using table salt
    • ¾ Cup Sugar
    • ⅔ Cup Non-Dairy Milk
    • ½ Cup Extra Virgin Olive Oil See Note
    • ⅓ Cup Fresh Orange Juice
    • 2 teaspoon Orange Zest This is the zest of 1 large orange
    • 1 teaspoon Vanilla Extract

    To Serve

    • 1 tablespoon Powdered Sugar

    Instructions
     

    • Preheat oven to 350* F. Grease an 8" round cake pan with coconut oil or pan spray and insert a parchment circle into the bottom of the pan.
    • In a medium bowl, combine flour, baking powder, baking soda and salt. Whisk to combine and set aside.
      1 ¾ Cups All-Purpose Flour, 1 ½ teaspoon Baking Powder, ¼ teaspoon Baking soda, ½ teaspoon Kosher Salt
    • In a large mixing bowl, combine sugar, non-dairy milk, olive oil, orange juice, orange zest and vanilla. Whisk to combine. Then, add the dry ingredients and whisk to form the batter.
      ¾ Cup Sugar, ⅔ Cup Non-Dairy Milk, ½ Cup Extra Virgin Olive Oil, ⅓ Cup Fresh Orange Juice, 2 teaspoon Orange Zest, 1 teaspoon Vanilla Extract
    • Pour the batter into the prepared 8" round cake pan. Spread the batter out evenly, then bake in a 350*F oven for 36-40 minutes, or until a toothpick inserted into the center of the cake comes out clean.
    • Allow the cake to cool completely, then flip it out onto a large plate or cake stand. Dust the cake with powdered sugar just before serving.

    Notes

    Be sure to use an extra virgin olive oil that you like cooking with and drizzling on top of food!
    When adding the dry ingredients to the wet ingredients, whisk just until the batter forms. Be sure not to over-mix!
