    Roasted Cabbage Steaks

    Roasted Cabbage Steaks are simple, flavorful, and oven-baked, which means there is only 10 minutes of hands-on time! This is the perfect easy side dish recipe.

    I love to make "steaks" out of different vegetables. In this context, a steak is just a large, thick slice of any vegetable that is great for roasting. Vegan Cauliflower Steaks are pretty common these days. And my Butternut Squash Steaks are one of my most popular recipes!

    And today, I am sharing this Roasted Cabbage Steaks recipe. This recipe is easy to make and is a satisfying side dish for any meal. And they are baked in the oven, so there is only about 10 minutes of hands-on time. So let's make them!

    Green Cabbage: This recipe requires a whole head of green cabbage. You can use red or purple cabbage, too, but I do prefer green cabbage for this recipe. If you have a red cabbage, make my Red Cabbage Slaw!

    Onion and Garlic Powder: Onion and garlic powder give this roasted cabbage steaks recipe so much flavor! Be sure you don't use garlic salt.

    Za'atar: Za'atar is a Middle Eastern herb blend that is made of thyme, sesame seeds and sumac. It is so delicious in this recipe!

    Lemon Juice: A squeeze of fresh lemon juice at the end brightens the dish up.

    Instructions

    A head of cabbage cut in to slices on a wooden cutting board.

    Step 1. Wash and dry a head of green cabbage, then remove any outer wilted leaves.

    Cut the cabbage into 1.25-inch slices. You should get 4 steaks from 1 medium cabbage. Two from the center and two end pieces.

    Olive oil and spices mixed together in a small bowl.

    Step 2. In a small bowl, combine extra virgin olive oil, garlic powder, onion powder and za'atar. Mix to combine.

    Step 3. Place the cabbage onto an unlined baking sheet.

    Then, brush each side with the olive oil and spice mixture and season each side with a pinch of salt and pepper.

    Step 4. Be sure the end pieces are cut-side facing up.

    Then, bake in a 425ยฐF oven for 35-40 minutes or until the roasted cabbage steaks start to brown and are tender in the center.

    Finish with a squeeze of fresh lemon juice and enjoy!

    Recipe FAQs

    How should I store the leftovers?

    Transfer leftovers to an airtight container and store in the refrigerator for up to 4 days.
    Reheat in a toaster oven or regular oven for best results!

    What spices are good in roasted cabbage?

    Garlic powder, onion powder, paprika or smoked paprika, cumin, fennel and so much more are delicious on cabbage.

    What temperature do you cook roasted cabbage steaks in the oven?

    I like to bake cabbage steaks at 425ยฐF so they get a little brown. And lower than that, and the cabbage just ends up steaming in the oven.

    Expert Recipe Tips

    Be careful with the end pieces! They do not have the stem running through the center to hold them together, so they want to fall apart. But they roast really well and I didn't want you to buy two cabbages and only use half of each for this recipe.

    Be sure the end pieces are cut side facing up before putting them in the oven! This will allow them to brown and not just steam.

    • 1 Cutting Board
    • 1 Large Chef's Knife
    • 1 Baking Sheet

    Ingredients
      

    • 1 Medium Head of Green Cabbage
    • 3 tablespoon Extra Virgin Olive Oil
    • 1 teaspoon Za'atar see note
    • ยฝ teaspoon Garlic Powder
    • ยฝ teaspoon Onion Powder
    • Kosher Salt and Black Pepper
    • ยผ Medium Lemon

    Instructions
     

    • Preheat oven to 425*F.
    • Wash the cabbage and pat dry. Then, remove any outer wilted or tough leaves. Use a chef's knife to cut the cabbage in half directly through the stem. Then, cut each half in half to create 4 cabbage steaks that are about 1.25 inches thick. Set aside.
      1 Medium Head of Green Cabbage
    • In a small bowl, combine olive oil, za'atar, garlic powder and onion powder. Stir to combine.
      3 tablespoon Extra Virgin Olive Oil, 1 teaspoon Za'atar, ยฝ teaspoon Garlic Powder, ยฝ teaspoon Onion Powder
    • Place the cabbage steaks on an unlined baking sheet. Be careful with the end pieces! Use a pastry brush to brush both sides of each steak with the olive oil mixture, then season both sides with salt and pepper.
      Kosher Salt and Black Pepper
    • Be sure the end pieces of the cabbage are cut side up. Then, place in a 425*F oven for 35-40 minutes or until the cabbage is browned around the edges and soft in the middle.
    • Remove the cabbage from the oven and squeeze the lemon over the top before serrving. Enjoy!

    Notes

    Za'atar is a Middle Eastern spice blend made of thyme, sesame seeds and sumac. It is so delicious on these cabbage steaks!
    Be careful when handling the end pieces of the cabbage. They do not have the stem in the middle to hold them together, so they will want to fall apart.
