What is Tahini?
The base of this salad dressing is tahini. But what is tahini?
It is a smooth, creamy paste made of sesame seeds. It is commonly used in Middle Eastern cuisine combined with fresh lemon juice, garlic and water to make a creamy sauce.
I love to use tahini to add a creamy element in all kinds of recipes from Tahini Pasta to Chickpea Egg Salad.
Ingredients
Tahini: Be sure your tahini is drippy and super smooth! My favorite brands are Krinos and Sesame King. Tahini is what makes this vegan caesar dressing creamy.
Lemon Juice: Use fresh lemon juice, please!
Capers: Capers add the salty, briny flavor that traditional caesar dressing has.
Garlic: Make sure to use a rasp grater to grate the garlic really finely.
Vegan Parmesan Cheese: We can't skip the parmesan! The only vegan parmesan cheese I recommend is Follow Your Heart.
Instructions
Step 1. In a medium bowl, combine tahini, lemon juice, dijon mustard, finely chopped capers, grated garlic, black pepper and salt.
Step 2. Then, mix with a spoon. It will become a thick paste.
Step 3. Now, add the water, one tablespoon at a time and mix until the mixture is a smooth and creamy dressing.
Step 4. Next, add the vegan parmesan cheese and mix once more.
Use your vegan Tahini Caesar Dressing as desired!

Transfer the dressing to a container with an airtight lid. Store in the refrigerator for up to 5 days.

Traditional caesar salad contains anchovies and cheese!
Expert Recipe Tips
If you store the vegan Tahini Caesar Dressing in the refrigerator, it will thicken up as it sits! So you may need to stir in a couple additional teaspoons of water before using it.
Do not use pre ground black pepper for this recipe! Fresh, coarsely ground black pepper makes a huge difference.

- 2 tablespoon Fresh Lemon Juice

- 1 Medium Clove of Garlic, grated on a rasp grater see note
- ½ teaspoon Coarsely Ground Black Pepper
- ¼ teaspoon Kosher Salt
- 4 tablespoon Cold Water See Note
- 3 tablespoon Non-Dairy Grated Parmesan Cheese see note
Instructions
- In a medium bowl, combine tahini, lemon juice, Dijon mustard, capers, grated garlic, black pepper and salt. Use a spoon to mix until a thick paste forms.⅓ Cup Creamy Tahini, 2 tablespoon Fresh Lemon Juice, 2 teaspoon Dijon Mustard, 2 teaspoon Finely Chopped Capers, 1 Medium Clove of Garlic, grated on a rasp grater, ½ teaspoon Coarsely Ground Black Pepper, ¼ teaspoon Kosher Salt
- Add the water, one tablespoon at a time, mixing until well combine between each addition. The dressing should have lightened in color and be super creamy.4 tablespoon Cold Water
