What is a Pizookie?
A pizookie is a skillet cookie.
The word itself is a mash-up of the word pizza and cookie because it's a big flat cookie that is cut into pizza-shaped triangles to serve.
So, this Vegan Cookies and Cream Pizookie is a big Oreo skillet cookie. And its insanely decadent and delicous.
Ingredients
Vegan Butter: I always recommend Soy-Free Earth Balance Buttery Sticks.
Brown Sugar: Light brown sugar, here.
Flax Egg: A combination of ground flax and water is the binder in this recipe.
Instant Coffee: Any brand will work. Or instant espresso powder. Instant coffee adds dimension to the chocolatey flavor.
Dutch Processed Cocoa Powder: I like Whole Foods 365 Brand cocoa powder. But also Hershey's Special Dark Cocoa powder is Dutch Processed.
Flour: I always recommend King Arthur Flour.
Baking Powder: To leaven the pizookie.
Salt: For balance.
White Chocolate Chips: I love the contrast white chocolate adds to this recipe, but you can use vegan milk chocolate chips if you like.
Oreos: It wouldn't be a Vegan Cookies and Cream Pizookie without Oreos!
Method
First, make the flax egg by stirring the flax, water, instant coffee and vanilla together.
Next, cream the vegan butter and brown sugar together.
Then, add the flax egg into the creamed mixtute.
Now, add the cocoa powder and stir. Once its almost combined, add the remaining dry ingredients to form the cookie dough.
Next, add the white chocolate chips and chopped Oreos and stir.
Finally, press the dough into a skillet and top with more chopped Oreos and bake!
What Kind of Pan
I used a 10" cast iron skillet to bake this Vegan Cookies and Cream Pizookie.
You can use an oven-safe stainless steel skillet, but be sure its 10 inches.
Do NOT use a non-stick skillet.
Top Recipe Tips
Use Dutch-processed cocoa powder!
Changing the type of cocoa powder can change the results.
Vegan White Chocolate Chips
The most common type of Vegan White Chocolate Chips that I see in the grocery store are Enjoy Life White Chocolate Chips.
They are mini chocolate chips which I really like. And they taste sweet and have a big dose of vanilla.
How to Serve
Slice the pizookie into triangles and use a spatula to remove the slices from the skillet.
I like to serve this Vegan Cookies and Cream Pizookie with cookies and cream ice cream on top.
But its delicious on its own, too!
Storage
To store, transfer to a container with a tight-fitting lid and store at room temp for up to 3 days or freeze for up to a month.
