And today, I'm sharing my new favorite sandwich filling recipe: BBQ Jackfruit Pulled Pork. This recipe only requires 30 minutes to make and is jam-packed with flavor from barbecue sauce, spices, and a hint of liquid smoke. And I promise you will not miss the meat!

What Is Jackfruit?
Jackfruit is a large tropical fruit. When it is ripe, the fruit tastes like Juicy Fruit bubblegum.
When it is underripe and young, it has a very mild flavor, similar to hearts of palm or canned artichoke. It is great at taking on flavors and has a texture that is similar to pulled pork.

Ingredients

Canned Young Jackfruit: This can be tricky to find in your local supermarket, but luckily, everything is easy to order online. Be sure you are purchasing young (sometimes labelled as green) jackfruit in brine, not ripe jackfruit in syrup!
Barbecue Sauce: I like a barbecue sauce that is on the vinegar-y side, like Stubbs Original, because I can add a touch of brown sugar to balance it out without it becoming too sweet.
Liquid Smoke: Liquid smoke is optional, but I like to add it to give the BBQ Jackfruit Pulled Pork a hint of smoky flavor.
Brown Sugar: A little bit of brown sugar balances out the tang of the barbecue sauce. If you use a sweet barbecue sauce like Sweet Baby Rays, omit the sugar!
Vegetable Stock: Vegetable stock helps all the flavors really cook into the jackfruit. I love Better Than Bouillon.
Instructions

Step 1. Drain and rinse the jackfruit, then use your hands to pull the pieces apart until they resemble pulled pork.
Set aside.

Step 2. Heat olive oil in a 10-inch skillet over medium heat.
Then, add sliced red onion and saute, stirring frequently, until browned, 5-7 minutes.

Step 3. Add jackfruit, vegetable stock, barbecue sauce, garlic powder, paprika, liquid smoke, and black pepper.
Stir to combine and bring the mixture to a simmer.

Step 4. Then, reduce the heat to low and simmer, stirring occasionally, until most of the liquid has evaporated, about 20 minutes.
Serve as desired.
How to Serve BBQ Pulled Jackfruit
I like to serve the smoky jackfruit like a pulled pork sandwich: on a toasted hamburger bun, topped with vegan coleslaw.
But, it is also delicious on a plate with baked beans, vegan cornbread, and a scoop of Cashew Mac and Cheese or coleslaw!

- 2 tablespoon Extra Virgin Olive Oil
- ½ Medium Red Onion, thinly sliced
- 1 Cup Vegetable Stock
- ⅓ Cup Barbecue Sauce see note
- 2 teaspoon Brown Sugar see note
- 1 teaspoon Garlic Powder
- 1 teaspoon Paprika
- ¼ teaspoon Liquid Smoke optional
- Black Pepper
Instructions
- Drain the jackfruit and rinse it really well. Then, use your hands to pull the pieces apart until it resembles pulled pork. Set aside.14 oz Can of Young Jackfruit in Brine

- Into the skillet, add the jackfruit, vegetable stock, barbecue sauce, brown sugar, garlic powder, paprika, liquid smoke, and some black pepper. - Bring the mixture to a simmer, then reduce the heat to low. Simmer the barbecue jackfruit, stirring occasionally, until most of the liquid has evaporated, but the jackfruit is still saucy, then remove from heat.
- Serve as desired either a plate with side dishes or as a pulled jackfruit sandwich. This recipe makes 4 sandwiches!
