I love a no-bake treat! They are the perfect thing to make when I'm short on time, but still want something sweet. I love to whip up a batch of Chocolate Covered Dates, or No Bake Edible Cookie Dough Bites, but sometimes, I need a nostalgic childhood treat like these Vegan Rice Krispie Treats.

Ingredient Notes
Crisp Rice Cereal: Rice Krispies are not vegan, so I used Whole Foods Brown Rice Crisps. Be sure to use crisp rice cereal, not puffed rice cereal!
Dandies Vegan Mini Marshmallows: Dandies marshmallows taste just like regular marshmallows! Do try to get the mini marshmallows, because they will melt better and faster.
Vegan Butter: Use any vegan butter you have on hand. I used Country Crock Plant Butter Sticks.
Almond Extract: Almond extract is optional, but I love it, here! It gives these Vegan Rice Krispie Treats a delightful birthday cake flavor.
Step by Step Instructions
Step 1. Melt vegan butter in a large Dutch oven over medium-low heat. Then, add mini marshmallows.
Step 2. Cook the mixture, stirring frequently, until the marshmallows have melted into a thick blob.
Step 3. Add the vanilla extract, almond extract and salt and stir, then add the crisp rice cereal. Fold the mixture until all the cereal is coated in marshmallows.
Step 4. Scrape the mixture into a greased and lined 8x8 square pan. Use a rubber spatula to press the mixture out evenly. Allow the Vegan Rice Krispie Treats to cool for at least an hour before slicing into squares and serving.

No. They have a type of vitamin D3 in them that is derived from animal ingredients. But, many similar cereals like Whole Foods Crisp Rice Cereal and Nature's Path Crisp Rice Cereal are vegan!
Dandies is the most widely available brand of vegan marshmallows in my area, but Trader Joe's also has vegan marshmallow.
Expert Recipe Tips
I like to use a Dutch oven for this recipe because it keeps the marshmallows warm while you fold the rice krispies into the mixture.
Vegan marshmallows do not melt the same way regular marshmallows do. They will melt into a thick blob. But, don't worry! They will still be able to coat all of the cereal!

Vegan Rice Krispie Treats

- 1 3-4 Quart Dutch Oven or other heavy-bottomed pot
- 1 Rubber Spatula
- 1 8x8" Square Pan
- Parchment Paper
- Measuring Cups and Spoons
Ingredients
- 4 tablespoon Vegan Butter
- 1 10oz Mini Vegan Marshmallows see note
- ½ teaspoon Vanilla Extract
- ¼ teaspoon Almond Extract optional
- ¼ teaspoon Kosher Salt
- 4 Cups Crisp Rice Cereal
Instructions
- Grease an 8x8 inch square pan and insert a parchment sling into the bottom for easy removal.
- Melt the vegan butter in a 3-4 quart Dutch oven over medium-low heat. Once the butter is melted, add the marshmallows, and cook, stirring frequently with a rubber spatula until the marshmallows have melted. They will look like a thick blob.4 tablespoon Vegan Butter, 1 10oz Mini Vegan Marshmallows
- Remove the pot from the heat and add vanilla extract, almond extract if you're using it and salt. Stir, then add the crisp rice cereal and fold the mixture with the spatula until all the cereal is coated in the marshmallow mixture.½ teaspoon Vanilla Extract, ¼ teaspoon Almond Extract, ¼ teaspoon Kosher Salt, 4 Cups Crisp Rice Cereal
- Scrape the mixture into a prepared 8x8 square pan and use the spatula to press it out evenly.
- Allow them to cool for at least an hour before using the parchment sling to remove the rice krispies from the pan to cut into squares.
