Ingredients
Ceremonial Grade Matcha Powder: Matcha powder is green tea leaves that are finely ground into a powder. For baking a Vegan Matcha Cake, you can get away with culinary grade. But for a latte, make sure to get ceremonial grade matcha.
Oat Milk: I like oat milk for this iced lavender matcha latte. I have tested this recipe with regular and unsweetened oat milk. Both work great!
Dried Lavender: Be sure to get culinary grade lavender for the lavender syrup. It should have no added flavors or fragrances.
Instructions
Step 1. First, make the lavender simple syrup by combining sugar, water and dried lavender flowers in a small saucepan over medium heat.
Bring the mixture to a boil and allow it to boil for 1 minute.
Then, remove from heat, place a lid on the pot and allow the lavender to steep for 15 minutes.
Step 2. Next, pour the syrup into a container through a fine mesh strainer to remove the flowers.
Then, use the back of a spoon to press the flowers to release any liquid they are holding onto.
Use immediately, or store in the refrigerator for up to two weeks.
Step 3. In a matcha bowl, combine matcha powder with hot water.
Step 4. Whisk the matcha until well combined and frothy. If you do not have a matcha whisk, use a hand-held milk frother!
Step 5. Into a tall glass with ice, add oat milk and lavender syrup.
Stir to combine.
Step 6. Pour the whisked matcha on top and stir once more.

For the Lavender Syrup
- 1 Cup Sugar
- 1 Cup Water
- 4 teaspoon Dried Lavender Flowers see note!
For the Latte
- 1 teaspoon Matcha Powder
- ¼ Cup Boiling Water
- ½ Cup Oat Milk
- 1 tablespoon Lavender Syrup
Instructions
Make the Lavender Syrup
- In a 1-quart saucepan, combine sugar, water and dried lavender flowers. Place the pan over medium heat and cook, stirring occasionally until the mixture boils. Allow it to boil for 1 minute.1 Cup Sugar, 1 Cup Water, 4 teaspoon Dried Lavender Flowers
- Remove the syrup from heat and place a lid on the pot. Allow the lavender to steep for 15 minutes.
- Remove the lid and pour the mixture into a container through a fine mesh strainer. Use the back of a spoon to press the flowers to release any liquid they are holding onto. Use immediately, or store in the refrigerator for up to two weeks.
Make the Latte
- Add the matcha powder to a matcha bowl. Pour the boiling water over the matcha and use a matcha whisk to whisk the mixture until its well combined and frothy, about 1 minute. See note.1 teaspoon Matcha Powder, ¼ Cup Boiling Water
- In a large glass filled with ice, combine the oat milk and lavender syrup. Stir to combine, then pour the whisked matcha on top. Stir once more, and serve!½ Cup Oat Milk, 1 tablespoon Lavender Syrup
