I made this 4 Ingredient Guacamole recipe for all of the cilantro haters out there. I'm not one of them, but I still I don't want you to miss out on the top tier snack food that is guacamole.

While I do still love cilantro, I make this exact recipe almost every time I make guacamole. And, thats because I'll use part of a bunch of cilantro in my guac and then the rest of it goes bad before I can use it. The worst. So instead of continuously wasting cilantro, I came up with this no cilantro guacamole recipe.
Ingredients for Making 4 ingredient Guacamole
This recipe contains what I think are the most important guacamole ingredients. Traditional guacamole you will find tomato, cilantro and red onion. I removed the tomato and cilantro completely and swapped the red onion for spring onion (or scallions). I did this because it has a more mild flavor. And and the green tops are more like an herb so its kind of like substituting green onion tops for the more traditional cilantro. Get it?
So here is what you will need:
Avocado: 1 used 2 large Haas avocados for this 4 ingredient guacamole recipe. If you can only find little ones, no worries. It will be about 3 of the smaller ones. It should equal about 2 cups of avocado.
Jalapeño: Jalapeño adds spice and freshness. I chop the jalapeño up super fine so there are no big spicy chunks. The amount I recommend in the recipe will be a medium spicy, so add more or less depending on your spice preference.
Spring Onion: I add a whole spring onion (scallion) to this 4 ingredient guacamole recipe- the white and green parts.
Lime Juice: The juice of a whole life rounds it all out. I used a whole fresh lime here, but I also love Santa Cruz bottled lime juice. I almost always have it on hand.
How to Store Guacamole
Nobody likes brown guacamole. The brown is just the fruit oxidizing which is completely natural and wont hurt you. Its just like when you chop an apple ahead of time and it turns brown on the outside. The only way to combat oxidation it to limit the amount of oxygen that touches the food.
Placing the item in an airtight container works well for most things, but guacamole is extra prone to oxidation so heres what I do:
First, scoop the leftover 4 ingredient guacamole into a container that has a tight fitting lid.
Then take a piece of plastic wrap and place it directly on top of the guacamole inside the container. Press the plastic onto the guacamole so that as little air can get to it as possible.
Finally, place the lid on top and store in the fridge for up to two days.

Ingredients
- 2 Large Ripe Hass Avocados
- ½ Medium Jalapeño , minced see note
- 1 Large Spring Onion, thinly sliced the white and green parts
- 3-4 teaspoon Lime Juice This is approximately the juice of 1 lime
- Pinch Salt
Instructions
- Halve the avocados and remove the pits. Scoop the avocado flesh into a bowl.
- Into the bowl add the jalapeño, spring onion, lime juice and a pinch of salt.
- Mix together with a fork, until the avocado is mashed and the ingredients are combined. See Note
- Serve with chips or atop tacos.
