This Vegan Italian Sausage Pasta recipe is ready in under 30 minutes and has tons of flavor thanks to Beyond Meat Italian sausage. This is a weeknight favorite!
This Vegan Sausage Pasta with Broccolini is my personal favorite dinner. Its quick, easy and full of flavor with minimal effort. When people ask me how to eat more vegan or vegetarian meals, this is the fist recipe I give them.

Ingredients for Making Vegan Sausage Pasta
Pasta: I choose rigatoni because its my absolute favorite pasta shape. I recommend any short cut, rigate (which refers to the little lines) pasta.
Beyond Meat Italian Sausage: I use Beyond Meats Hot Italian Sausage for this Vegan Sauage Pasta recipe. You can use the Sweet Italian Sausage or Impossible foods Italian sausage, as well. Ive used them all!
Garlic: Fresh minced garlic. Although if you buy the kind in a jar, it will work and I will never know.
Broccolini: I prefer broccolini over broccoli for this recipe. But, if you cant find broccolini, regular broccoli will work.
Vegetable Stock: Any veggie stock you have on hand will do. This just helps the broccolini steam a bit and makes a little sauce.
Lemon: I use a little zest and juice in this recipe for flavor and acidity.
Red Pepper Flakes: If you don't like spice, you can leave red pepper flake out. It just adds a little heat.
Which Plant Based Sausage is Best?
The ONLY vegan sausages I will recommend for this recipe are Beyond Meat Hot Italian or Sweet Italian Sausage, or Impossible Foods Italian Sausage.
Do not use Tofurkey, Lightlife or even Field Roast here. While I like them for other applications, these brands are not fatty or flavorful enough to carry through this dish.
Both Beyond sausage and Impossoble sausage mimic the fattiness and robust flavor of Italian sausage well. And those flavors are what flavors this entire Vegan Italian Sausage Pasta.
Recipe Notes
I remove the casing from the sausage for this vegan pasta recipe, but its not necessary. If you want to skip that step, chop the sausage up before sautéing it.
Be sure to use a very large skillet that has a lid to sauté the sausage. Remember that it needs to be big enough for all of the broccolini and pasta, too.

Vegan Sausage Pasta
Equipment
- 1 12" Skillet with a lid
- 1 3-4 quart For boiling the pasta
- 1 Cutting Board
- 1 Knife
- 1 Spatula or Wooden Spoon
Ingredients
- ½ Box Rigatoni
- 2 Beyond Meat Hot Italian Sausage Links
- 2 Cloves Garlic, Minced
- 1 Large Bunch of Broccolini, or 2 small bunches cut into 2 inch long peices
- ¼ teaspoon Crushed Red Pepper Flakes
- ½ Cup Vegetable Stock
- ½ tsp Lemon Zest
- 1 tablespoon Lemon Juice
- Salt and Black Pepper to taste
Instructions
- Bring a 3-4 Quart pot of water to a boil. Season the water with salt and cook rigatoni to al dente.
- Remove the casing from the sausage links. Add the sausage to a large skillet over medium heat. While the sausage cooks, break into chunks with a wooden spoon.
- After 2 minutes, add the garlic. Sauté everything until sausage is cooked. About 4 minutes.
- Add broccolini to the sausage and garlic and season with a pinch of salt and pepper. Place a lid on the skillet and cook for 5 minutes, stirring occasionally.
- Add vegetable stock to deglaze the pan, then add lemon zest and crushed red pepper flake and lemon juice.
- Add cooked pasta to the pan and cook everything together until most of the liquid from the pan has mostly evaporated. Serve.
