Ingredients
Rolled Oats: I prefer the texture of old fashioned rolled oats, but you can use quick oats, too! But don't use steel cut!
Grated Carrot: They wouldn't be carrot cake overnight oats without carrot! Grate the carrot on the small side of the box grater.
Chopped Dates or Raisins: I am not a raisin person, so I used chopped Medjool dates. But, if you like raisins, use them here!
Spices: Cinnamon and nutmeg give this recipe so much flavor. You could also use pumpkin pie spice.
Non-Dairy Milk: I used oatmilk, but almond or soymilk will also work! Use your favorite.
Ground Flax: I wanted to make this overnight oatmeal with no chia seeds, so I used a little ground flax instead.
Instructions
Step 1. In a container with a tight-fitting lid, add oats, non-dairy milk, grated carrot, chopped dates or raisins, ground flaxseed, maple syrup, spices and vanilla.
Mix very well, then place in the refrigerator overnight.
Step 2. In the morning, give the oats a stir and top with any additional toppings you like, such as walnuts, pecans, shredded coconut, sliced banana or berries.

Carrot Cake Overnight Oats (no chia seeds!)
Equipment
- 1 8-16 oz container with tight-fitting lid
- 1 Box Grater
- Measuring Cups and Spoons
Ingredients
- ½ Cup Old Fashioned Rolled Oats
- ½ Cup Non-Dairy Milk
- ¼ Cup Finely Grated Carrot see note
- 2 tablespoon Chopped Medjool Dates or Raisins
- 1 tablespoon Ground Flaxseed
- 1 tablespoon Maple Syrup
- ¼ teaspoon Ground Cinnamon
- ¼ teaspoon Vanilla Extract
- 1 pinch Ground Nutmeg
- Additional toppings like: chopped walnuts or pecans, coconut, sliced banana, berries, etc.
Instructions
- Combine all ingredients except additional toppings into an 8oz-16oz container with a tight fitting lid. Stir the ingredients well.
- Top with the lid and place in the refrigerator for 1-8 hours.
- When you are ready to serve, stir the oats, then top with any additional toppings you desire.
