    Vegan Blueberry Oat Flour Pancakes (No Banana!)

    These Vegan Blueberry Oat Flour Pancakes are simple to make with no banana and no egg. They are dairy-free and are made with oat flour so they are also gluten-free! These pancakes are a quick and delicious breakfast.

    I like to have a wide variety of breakfast recipes for weekdays and weekends. I have home that you can make and keep in the freezer for an ultra quick weekday breakfast like my Vegan Banana Coffee Cake Muffins, and some that are meant for a weekend like Biscoff Pancakes or Vegan Honey Buns.

    These Vegan Blueberry Oat Flour Pancakes are quick to make, but probably fall into the weekend breakfast category, just like my Vegan Pumpkin Pancakes. They are a simple and delicious plant based breakfast that requires no special equipment (no blender!) and basic ingredients.

    I make this pancake recipe all the time! Here are the top 5 reasons why I love this recipe and I think you will to:

    Ingredient Notes

    Ingredients you need to make these vegan oat flour pancakes on a marble board.

    Oat Flour: This recipe uses store-bought oat flour, so you don't need a blender! I like Bob's Red Mill.

    Non-Dairy Milk: I used oat milk, but any non-dairy milk will work.

    Applesauce: I little apple sauce adds natural sweetness and moisture to the vegan oat flour pancakes since they are made without banana.

    Vegan Butter: A little melted vegan butter goes into the batter, but you will also need some for the pan!

    Baking Powder: Baking powder makes these pancakes fluffy!

    Blueberries: I like frozen wild blueberries for this because I think they have the most flavor.

    Step-by-Step Instructions

    Step 1. First, combine oat flour, baking powder and salt in a large bowl.

    Step 2. Then, combine non-dairy milk, applesauce, vegan butter and vanilla in a small bowl or measuring cup.

    Step 3. Pour the wet ingredients into the dry ingredients and whisk well. Then, allow the batter to rest for 5 minutes.

    Step 4. Pour about ¼ cup of batter onto a hot greased skillet, then add some frozen blueberries to the top.

    Step 5. When they are ready to flip the should look set at the edges and have small bubbles on top.

    Step 6. Flip the pancake and repeat with the remaining batter.

    How to Top the Pancakes

    I like to top my oat flour pancakes with more vegan butter and maple syrup, but you could also make:

    • Bourbon Maple Syrup to drizzle on top.

    How should I store the Vegan Blueberry Oat Flour Pancakes?

    I find these pancakes are best if they are allowed to cool completely, then frozen. Then when you want to eat them, reheat in a toaster oven.

    Can I use homemade oat flour for this recipe?

    Yes! just be sure you grind the oat flour very finely in a blender.

    Expert Tips and Tricks

    Be sure to whisk the batter very well. These pancakes are gluten-free so you don't need to worry about activating gluten, here!

    And don't skip the 5 minute rest time. It will allow the oat flour time to absorb the liquid. The batter will thicken a little bit during this time.

    I recommend that you use a non-stick pan to cook these Vegan Blueberry Oat Flour Pancakes if you have one.

    • 1 Mixing Bowl
    • 1 Whisk
    • Non-Stick Skillet
    • Measuring Cups and Spoons

    Ingredients
      

    • 1 Cup Oat Flour
    • 1 ½ teaspoon Baking Powder
    • ¼ teaspoon Salt
    • ¾ Cup Non-Dairy Milk
    • ¼ Cup Applesauce
    • 1 tablespoon Melted Vegan Butter (plus more for cooking)
    • 1 teaspoon Vanilla Extract
    • ½ Cup Fresh or Frozen Blueberries

    Instructions
     

    • In a large mixing bowl, combine the oat flour, baking powder and salt. Whisk to combine.
      1 Cup Oat Flour, 1 ½ teaspoon Baking Powder, ¼ teaspoon Salt
    • In a small bowl or measuring cup, combine non-dairy milk, applesauce, melted vegan butter and vanilla.
      ¾ Cup Non-Dairy Milk, ¼ Cup Applesauce, 1 tablespoon Melted Vegan Butter (plus more for cooking), 1 teaspoon Vanilla Extract
    • Pour the wet ingredients into the dry ingredients and whisk well, for about 1 minute.
    • Allow the batter to rest for 5 minutes. See note.
    • Heat a large non-stick skillet over medium low heat. Grease it with vegan butter or pan spray. Pour about ¼ cup of batter on to the pan and add a few blueberries onto the batter. Repeat as many times as your pan size will allow.
      ½ Cup Fresh or Frozen Blueberries
    • Cook the pancakes for about 3 minutes, or until the edges look set and there are small bubbles on top. Then flip and cook about 3 minutes longer. Repeat with all the remaining batter. You should get 8 pancakes.

    Notes

    Whisk this batter really well! You do not need to worry about forming gluten, because these are gluten-free.
    Do not skip the resting time. It allows the flour time to absorb the liquid. The batter will thicken up a bit in this time.
    To store, allow the pancakes to cool and freeze them for up to a month. Reheat in a toaster oven.

      Love these! Super filling and lighter than most oat flour pancakes I’ve made, plus the blueberries add a delicious flavor. My 10-month old loves these and we make them at least once a week, I just omit the butter and salt and they are still super tasty.
