    Pineapple Pico de Gallo

    Pineapple Pico de Gallo is a quick and easy salsa recipe that is delicious on everything from tacos and burritos to grain bowls! It's packed with flavor from fresh pineapple, jalapeño and plenty of lime juice.

    We eat a lot of tacos in my house and I love to make fun salsas and toppings to add to them! When the corn is delicious in the summertime, I can't get enough Corn Salsa. And in the spring I made Mango Pico de Gallo, and I make Avocado Pico de Gallo and Red Cabbage Slaw all year round!

    And recently, I can't get enough of this Pineapple Pico de Gallo! It is the perfect way to add freshness to a burrito, taco or grain bowl. It uses pineapple instead of the Roma tomatoes that you would find in a traditional pico. It is sweet and spicy and packed with flavor. And best of all, it only requires 15 minutes and absolutely no cooking to make it!

    Ingredients

    Fresh Pineapple: Do not use canned or frozen pineapple for this recipe! I used half of a fresh pineapple. But, if you want to skip some of the chopping, you can grab a container of pre-chopped pineapple and chop it into smaller pieces.

    Red Onion: Traditional Pico de Gallo is made with white onion, but I like the bite and color of red onion.

    Jalapeño: I used a whole jalapeño in this recipe. If you don't like heat, use half of a jalapeño. And if you love heat, you can always use a spicier pepper like a habanero.

    Cilantro: I love cilantro, so I use it any chance I get. But, if you don't like cilantro, leave it out. This pineapple salsa will still be delicious!

    Lime Juice: Use fresh lime juice! The stuff in the bottle never tastes the same.

    Step 1. First, chop the pineapple into ½" pieces.

    You want all of the ingredients in the pico de gallo to be small so you get a little bit of everything in each bite!

    Step 2. Next, combine finely chopped pineapple, onion, jalapeño and cilantro in a large mixing bowl.

    Then, add lime juice and salt.

    Finally, stir to combine and that's it! Serve immediately, or store in the refrigerator until you are ready to serve.

    What to Serve it With

    • Serve this Pineapple Pico de Gallo along side chips, other salsas and some 4 Ingredient Guacamole for the perfect snack.
    • Use it to top a grain bowl.
    • Add a scoop into a Black Bean Burrito.
    • Use it to top Lentil Tacos for a bit of freshness.

    How should I store this Pineapple Pico de Gallo?

    Store this recipe in an airtight container in the refrigerator for up to 4 days.
    I do not recommend freezing this recipe.

    What is the difference between salsa and pico de gallo?

    Salsa is typically cooked in some way while pico de gallo is made with completely fresh, raw ingredients.

    What to use instead of cilantro in pico de gallo?

    If you don't like cilantro, simply leave it out! I don't recommend adding another herb in its place.

    Expert Recipe Tips

    The most important part of this Pineapple Pico de Gallo recipe is the chopping! Try to chop every thing in small, evenly sized pieces. This will ensure that you get a little bit of each ingredient in every bite.

    • 1 Large Bowl

    Ingredients
      

    • 2 Cups Finely Chopped Pineapple See note
    • ¼ Large Red Onion, finely chopped
    • 1 Medium Jalapeño, seeded and minced See note
    • ⅓ Cup Cilantro, lightly packed, chopped
    • 2 tablespoon Fresh Lime Juice
    • ¼ teaspoon Kosher Salt

    Instructions
     

    • Into a large bowl, combine finely chopped pineapple, red onion, jalapeño and cilantro.
      2 Cups Finely Chopped Pineapple, ¼ Large Red Onion, finely chopped, 1 Medium Jalapeño, seeded and minced, ⅓ Cup Cilantro, lightly packed, chopped
    • Add lime juice and salt to the bowl and stir the Pineapple Pico de Gallo together with a large spoon.
      2 tablespoon Fresh Lime Juice, ¼ teaspoon Kosher Salt
    • Serve immediately or store in an airtight container in the refrigerator for up to 4 days.

    Notes

    2 Cups of pineapple is about ½ of a fresh pineapple. Chop it into about ½" cubes or slightly smaller.
    If you don't like spice, use ½ of a jalapeño. If you love spice, you can use a spicier pepper like a habanero!
